Lemon Mascarpone Fondant
Ingredients :
200 g of mascarpone
150 g of sugar
100 g Butter
The juice and the zest of 2 lemons
A pinch of salt.
3 eggs
150 g of flour
1 bag of chemical yeast
Instructions :
Preheat your oven to 180°C (350°F). Butter a 20 cm cake mold.
In a bowl, melt the butter in the microwave or low heat, then add the mascarpone and mix until you get a smooth texture.
Add the sugar, then add the eggs one by one, mixing well after each addition.
Add the juice and zest of the lemons then mix again.
Sift the flour, chemical yeast and salt, then incorporate them into the previous mixture by gently stirring.
Pour the preparation into the mold and bake for 25-30 minutes, or until the fondant is golden brown and firm to the touch.
Let cool slightly before forming. Serve warm or at room temperature, sprinkle with icing sugar if desired.

Ingredients:
Vanilla Cake:
• 2 1/2 cups all-purpose flour
• 2 1/2 teaspoons baking powder
• 1/2 teaspoon salt
• 1 cup unsalted butter, softened
• 1 3/4 cups granulated sugar
• 4 large eggs
• 1 tablespoon vanilla extract
• 1 cup whole milk
Custard Filling:
• 2 cups whole milk
• 1/2 cup granulated sugar
• 3 tablespoons cornstarch
• 4 large egg yolks
• 1 teaspoon vanilla extract
• 2 tablespoons unsalted butter
Vanilla Buttercream:
• 1 cup unsalted butter, softened
• 3 cups powdered sugar
• 2 tablespoons heavy cream
• 1 teaspoon vanilla extract
• 1/4 teaspoon salt
Directions:
1️⃣ Bake the Cake:
Preheat oven to 350°F (175°C). Grease and line two 9-inch cake pans. In a bowl, whisk flour, baking powder, and salt. In another bowl, beat butter and sugar until fluffy. Add eggs one at a time, followed by vanilla. Alternate adding dry ingredients and milk, mixing until smooth. Divide batter between pans and bake for 30-35 minutes. Let cool completely.
2️⃣ Make the Custard Filling:
Heat milk in a saucepan over medium heat. In a bowl, whisk sugar, cornstarch, and egg yolks. Slowly whisk in hot milk, then return the mixture to the saucepan. Cook, stirring constantly, until thickened. Remove from heat, stir in vanilla and butter, then let cool completely.
3️⃣ Prepare the Buttercream:
Beat butter until creamy. Gradually add powdered sugar, then mix in heavy cream, vanilla, and salt until smooth.
4️⃣ Assemble the Cake:
Place one cake layer on a plate. Spread custard filling evenly, then place the second layer on top. Frost with vanilla buttercream.
5️⃣ Serve:
Chill for 30 minutes before slicing. Enjoy!

For the Sweet Potato Fries:
2 large sweet potatoes (cut into fries)
2 tbsp olive oil
1 tsp cornstarch (helps with crispiness)

½ tsp garlic powder
½ tsp chili powder
½ tsp salt
¼ tsp black pepper
For the Chipotle Lime Crema:
½ cup sour cream (or Greek yogurt)

Ingredients:
1 lb ground beef
6 slices bacon, cooked and crumbled
1/2 cup diced onion
1 tsp garlic powder
1/2 tsp salt
1/2 tsp black pepper
1 tbsp ketchup
1 tbsp mustard
1 tbsp mayonnaise
1 cup shredded cheddar cheese
4 large flour tortillas
1/2 cup shredded lettuce
1/2 cup diced tomatoes
Pickles (optional)
Instructions:
Cook ground beef in a skillet over medium heat until browned. Drain excess grease.
Add onion, garlic powder, salt, and pepper. Cook for 2 minutes.
Stir in ketchup, mustard, and mayonnaise. Mix well and remove from heat.
Warm tortillas, then layer each with cheese, beef mixture, bacon, lettuce, tomatoes, and pickles if using.
