1. Classic Flan
Ingredients
• 1 cup sugar
• 1 can (14 oz) sweetened condensed milk
• 1 can (13.5 oz) evaporated milk
• 3 large eggs
• 3 large egg yolks
• 1 tsp vanilla extract (optional)
Instructions
1. Make the caramel:
Heat the sugar in a saucepan over medium heat until it melts and turns golden amber. Quickly pour it into a round baking dish and swirl to coat the bottom.
2. Prepare the custard:
In a bowl, whisk together condensed milk, evaporated milk, eggs, egg yolks, and vanilla until smooth.
3. Fill the mold:
Pour the custard mixture over the hardened caramel.
4. Bake in a water bath:
Place the flan dish inside a larger pan filled halfway with hot water. Bake at 325°F (160°C) for 45–60 minutes, or until the center is just set.
5. Cool and serve:
Let it cool completely, then refrigerate at least 4 hours.
Run a knife around the edge and invert onto a plate to serve.
2. Coconut Flan
Ingredients
• 1 cup sugar
• 1 can (14 oz) sweetened condensed milk
• 1 can (13.5 oz) coconut milk
• 3 large eggs
• 2 large egg yolks
• ½ cup shredded coconut (optional)
Instructions
1. Melt the sugar to make caramel and coat the bottom of the baking dish.
2. Whisk together condensed milk, coconut milk, eggs, egg yolks, and shredded coconut.
3. Pour the mixture over the caramel.
4. Bake in a water bath at 325°F (160°C) for 45–55 minutes.
5. Cool, chill for several hours, then unmold and serve.
3. Coffee Flan
Ingredients
• 1 cup sugar
• 1 can (14 oz) sweetened condensed milk
• 1 can (12 oz) evaporated milk
• 3 large eggs
• 1 tbsp instant coffee (or 2 tbsp strong brewed coffee)
Instructions
1. Prepare the caramel and coat the baking dish.
2. In a bowl, mix condensed milk, evaporated milk, eggs, and instant coffee until fully dissolved.
3. Pour the custard over the caramel layer.
4. Bake in a water bath at 325°F (160°C) for 45–60 minutes.
5. Cool completely, refrigerate for a few hours, then unmold.
4. Chocolate Flan
Ingredients
• 1 cup sugar
• 1 can (14 oz) sweetened condensed milk
• 1 can (12 oz) evaporated milk
• 3 large eggs
• 4 oz bittersweet chocolate, melted
Instructions
1. Prepare caramel and pour into the pan.
2. Whisk together condensed milk, evaporated milk, eggs, and melted chocolate until smooth.
3. Pour over the caramel.
4. Bake at 325°F (160°C) in a hot-water bath for 50–65 minutes.
5. Chill for several hours, then invert onto a serving plate.
