Its roots trace back to Hokkien braised pork traditions, brought to Taiwan by Chinese immigrants during the Qing Dynasty.

During the Japanese era, cooks minced the pork and slow-braised it with soy, spices, and aromatics — making it affordable, hearty, and perfect for everyday meals.

After WWII, lu rou fan spread across night markets from Changhua to Taipei, becoming a go-to comfort food for all.

Pad Krapao, also written as Phat Kaphrao, is one of Thailand’s most beloved everyday dishes, born not in royal kitchens but in the hot, hurried rhythm of street life. 🌶️🍃
Its roots trace back to central Thailand in the mid-20th century, when wok cooking became a fast, practical way to feed workers and students. The dish is built around holy basil (krapao), a sharp, peppery herb long used in Thai cooking and traditional medicine. Unlike sweet basil, krapao bites back. It perfumes the air, wakes the appetite, and defines the dish’s soul.
Pad Krapao likely evolved as a stir-fry solution: minced or chopped meat quickly cooked with garlic, Thai chilies, fish sauce, and soy, then finished with a fistful of holy basil tossed in at the last second. No coconut milk, no long simmer. Speed mattered. Flavor mattered more.
By the 1970s and 1980s, Pad Krapao had become a staple of raan ahaan taam sang (made-to-order eateries), cementing its status as Thailand’s ultimate comfort food. Served over rice and crowned with a crispy fried egg (kai dao), it became the default answer to the eternal Thai question: “What should we eat?”
Today, Pad Krapao is both deeply traditional and endlessly adaptable, made with pork, chicken, beef, seafood, or plant-based proteins. Yet its heart remains unchanged: the fiery heat, the savory punch, and the unmistakable aroma of holy basil, a dish that tastes like Thailand moving fast, hungry, and alive. 🔥🍳

Humiliation is not a method of learning.

Since I learned to reason, I’ve seen kitchens where humiliation is raised like a flag passed down from chef to chef, justified as “this is how I was taught.”
But pain is not tradition, and fear is not discipline. Some refuse to unlearn it old habits disguised as strength.

I’ve watched talented cooks with real potential slowly shrink.
Hands that once moved with confidence began to shake.
Minds that once created freely became trapped by fear.
Not because they lacked skill but because they were repeatedly broken by those who chose ego over leadership.

To those going through this now: I know the anger. I know the urge to explode. 🔥
But remember this your worth is not defined by someone who needs to humiliate others to feel powerful.

If you have to humiliate to teach, then you don’t know how to teach.
True chefs build people.
True leaders create safe kitchens where discipline meets dignity.
And real mastery is shown not by how loud you are but by how many you lift.
