*Key Responsibilities*:
- Lead and manage a team of bakers and pastry chefs, fostering an environment of creativity and excellence.
- Develop and introduce new pastry items that blend Japanese and French techniques, flavors, and presentations.
- Oversee the production process to ensure high standards of quality and consistency.
- Train and mentor baking staff in specific techniques and traditions of Japanese and French pastry.
- Manage the pastry department’s inventory, cost controls, and equipment maintenance.
- Collaborate with the front-of-house team to educate them on the cultural significance and unique selling points of our pastries.
- Uphold and ensure compliance with food hygiene regulations and safety standards.
*Requirements*:
- At least 5 years of professional experience as a baker or pastry chef, with a specific focus on both Japanese and French pastry arts.
- Proficiency in a wide range of techniques, including laminating dough, tempering chocolate, sugar art, and more.
- An impressive portfolio showcasing expertise in delicate Japanese wagashi, French bread, and desserts such as macarons, croissants, and entremets.
- Strong leadership skills with the ability to inspire and guide a team.
- Creative and artistic skills to create visually appealing and innovative pastry offerings.
- Excellent organizational and management abilities.
- Formal culinary training or equivalent experience in Japanese and French cuisine is highly preferred.
- Willingness to work flexible hours, including early mornings, weekends, and holidays.
