Would you delay cash for the sake of quality? 💸

This is exactly what craft chocolate makers are known for: sacrificing the business aspect to create the best chocolate flavor profile they can.

🕰️ AGING CHOCOLATE is one of those mysterious steps that is never explained or even addressed in professional books. Yet craft chocolate makers swear they can feel, smell and taste the difference.

In today's article on my blog, I dive deep into how and why craft bean-tobar makers age their chocolate.

These kids are learning a sweet question, “Where do Chocolate came from?”

Chocolate originated from the cacao tree (Theobroma cacao), which is native to the tropical regions of Central and South America. The history of chocolate dates back over 3,000 years to ancient Mesoamerican civilizations, such as the Olmec, Maya, and Aztecs.

These civilizations prized cacao beans, which they believed had magical and medicinal properties. They used the beans to make a bitter drink called xocoatl, which was considered a luxury item and was often used as a form of currency.

From there, chocolate spread to Europe through the Spanish conquistador Hernán Cortés, who brought cacao beans back to Spain in the 16th century. The Spanish developed a sweeter version of chocolate by adding sugar and milk, which became popular throughout Europe.

Today, chocolate is enjoyed worldwide, and cacao is grown in many tropical countries, with the top producers being Côte d'Ivoire, Ghana, and Indonesia.

Happy learning!
