…and freshly brewed Filter Coffee featuring our new Timor natural anaerobic coffee ☕️

A specialty, high-altitude coffee from Timor-Leste (Ermera region) known for its complex, fruity, and winey profile, often featuring notes of tropical fruit, berries, and caramel. This process involves sealing the coffee cherries in oxygen-limited tanks for 48–72 hours to enhance sweetness and body 🍒

Last week we had the pleasure of welcoming Scott Rao to the Roastery. We’ve been working with Scott remotely over the past 6 months, so we were super stoked to have him onsite for the afternoon to take a deep dive into our roasting.

Lots of honest conversations, plenty of learning, and a clearer path for how we roast from here.

We set the bar high because we want to put the best possible coffee in your cup, and this was a big part of that journey.

And a big character building moment for Carley calmly making a pour over for Scott like it was just another Wednesday. No stress. None at all 😂☕️😬
