| Until reaching its final stage, the coffee beans follow a long and intense journey. Among the paths taken by the beans in the supply chain is their processing a crucial step.
Specifically, in La Pradera, Colombia, we can see the pulper machine and how it works. 📸 (in this pic).
The function of this machine is simple but crucial: to remove the soft skin from the beans that have just arrived from the field. The soft pulp needs to be removed (otherwise a potentially uncontrollable fermentation will occur).
After this stage, beans will be sent to water tanks where they will be left for up to 72 hours, always depending on the weather conditions for fermentation.
After this process, the parchment (the called part that remains after skin be removed) will be washed and dried, thus forwarding in batches for storage in the spot. But we are not finished yet. We have also to remove the parchment and the silver skin.

Our blend Rainy Day is designed exactly for days when the rain is pouring down outside and you just need to take a little break and to contemplate the nature.
Also, it is the perfect moment to relax and enjoy yourself drinking a great cup of coffee.
Rainy day is composed of 75% of beans from Brazil and 25% from Colombia. Its lighter roast allows citrus notes to be more evident on the taste.
These origins will provide to your rainy day the warmest simplicity of life inside a mug.

Yes, we do have Robusta & we love this particular variety ❤️🇧🇷|
Our blend Black Velvet has 20% of the variety Conilon, majority cultivated in Espirito Santo area in Brazil.
There is a special reason for us to use Conilon in terms of behaviour and flavour:
This variety has a more neutral taste, accentuating the bitterness, due to the fact it has twice as much caffeine as arabica and its composition contains higher levels of fat, due to its accentuated levels of oiliness.

COVID-19 UPDATED | It is evident that the pandemic has affected everyone in the supply chain in different ways: containers, cash flow, and congestion.
Coffee shops and roasters are looking for innovative ways to remain profitable.
Talking about us from Luke's coffee, we have been doing as much as we can to keep our prices stand to all clients and still roasting our batches.
Coffee trees continue to produce and smallholder still having coffee production as the livelihood. For this reason, in particular, we keep our production and since the outbreak, we have not interrupted our roasting.
