An incredibly simple and satisfying way to minimise food waste is to set aside and freeze all of the veggies scraps that work well in soup stocks - that’s carrots, onions, leeks, celery, garlic, herb stalks, tomato trimmings. Once you have a decent sized collection, sauté them in some olive oil, add 4 litres of water, some peppercorns and a bay leaf, then simmer on a medium-low heat for an hour or so. Cool down and strain out all the solids (which you can compost), et voilá! Flavourful, zero-waste home made stock.

I turned my weekend batch into a delicious vegetarian minestrone... and then added the new trimmings from the fresh veggies and herbs straight into the freezer bag for the next stock.

🎶It’s the circle of liiiiiiiife....🎶

(It’s also another example of everyday climate activism. 💚🌏💙✊)
