INGREDIENTS



๐Ÿ‘‰ 2 fingers of ripe Plantain (Fried)

๐Ÿ‘‰ 500g Gizzard, chopped, seasoned and cooked

๐Ÿ‘‰ 200g Carrots

๐Ÿ‘‰ 100g Green Pepper

๐Ÿ‘‰ 200g Fresh Tomatoes, chopped

๐Ÿ‘‰ 1 Onion bulb, cut into rings

๐Ÿ‘‰ 3 Chili Pepper, finely chopped

๐Ÿ‘‰ 1 Seasoning cube

๐Ÿ‘‰ 1/2 cup of Vegetable Oil

๐Ÿ‘‰ 1/4 tsp of Thyme

๐Ÿ‘‰ 1/2 tsp of Curry

๐Ÿ‘‰ 1/2 tsp of Fresh Ginger, finely chopped

๐Ÿ‘‰ A dash of salt to taste

๐Ÿ‘‰ 2 leaves of Lettuce, for garnishing



DIRECTIONS



๐Ÿ‘‰ Set the Fried Plantain in a plate

๐Ÿ‘‰ Add the oil into a pan and place on heat

๐Ÿ‘‰ Put the cooked gizzard into the hot oil and stir for about one minute

๐Ÿ‘‰ Add the tomatoes and let it cook for 5 minutes

๐Ÿ‘‰ Add the onions,carrots, green pepper, ginger and chili pepper

๐Ÿ‘‰ Season with the seasoning cube, curry and thyme

๐Ÿ‘‰ Add salt to taste

๐Ÿ‘‰ Serve with the fried plantain, garnishing with lettuce and tomatoes.
