HISTORY OF NOUGAT

Nougat is a traditional confectionery dating back to the 1700s. Made with honey, glucose, sucrose, roasted nuts (almonds, pistachios, hazelnuts and more recently macadamia nuts are common), and dried fruits.

The consistency of nougat can range from soft and chewy to hard and crunchy depending on its composition. The word nougat comes from Occitan pan nogat (Occitan pronunciation: [panuˈɣat]), which means nutbread.

There are three basic kinds of nougat: The first, and most common, is white nougat (which appeared in Cremona, Italy in the early 15th century and later in Montélimar, France, in the 18th century) is made with beaten egg whites and honey.

The second is brown nougat (referred to as “mandorlato” in Italy and nougatine in French) is made without egg whites and has a firmer, often crunchy texture. The third is the Viennese or German nougat which is essentially a chocolate and nut (usually hazelnut) praline.

Go for whole grain. Brown rice, farro, teff, and whole wheat are just a few of the whole grains you’ll find in this new group of crackers, along with amaranth and quinoa—which are technically seeds but count as grains. These healthy carbs provide a variety of phytonutrients and fiber, which have been linked to a lower risk of cardiovascular disease, colorectal cancer, and stroke, and may also help to reduce the risk of type 2 diabetes.

Monitor portion size. If you stick to the recommended serving sizes, crackers aren’t going to do a ton of diet damage, says Amy Keating, R.D., a Consumer Reports dietitian. Among the products we tested, the calories ranged from 5 to 40 in just one cracker. If bigger portions make you feel more satisfied, choose a thin or small cracker.

Count the sodium and sugars. While crackers may not have as much sodium as some other packaged foods, they can still contribute more of the mineral to your diet than you think. The sodium count per serving of the crackers in our tests ranged from 90 to 280 mg; sugars ranged from 0 to 6 grams.

Those in the latter camp believe that healthful means "good for your health" (which is true), and that healthy means "having or showing good health" (which is also true), and that one word can never be used for the other. . .which, well, isn't true.These vegetables are healthful. They are also healthy. Both words are correct.

Let's look at the histories of these two words. Healthful is older. It dates to the late 14th century, when it was used exclusively to mean "conducive to health" or "good for you." Within about 150 years, though, healthful was also being used to mean "having or showing good health."

In American English, healthy is far more common than healthful, and in British English healthful is downright rare.
