The Best Oven Rack Position for Baking Cookies

Most ovens have two or three racks. But, when it comes to making cookies, there is no reason to take a bet on which one will ensure the superior bake. We have all the information you need on best oven rack position for baking cookies.

1) Where should I bake my cookies?

The simple answer to this question is, meet in the middle. Cookies should (almost) always be baked on the middle rack of the oven. The middle rack offers the most even heat and air circulation which helps cookies bake consistently.

The bottom rack of the oven is closest to the heat source (ovens heat from the bottom unless you have the broiler on), so it can result in burnt bottoms. The top rack of the oven is the furthest from the heat and can result in cookies that spread a little too much.

To make sure your oven is in pristine condition, follow our maintenance tips.

Ideally, cookies are baked one sheet at a time, placed horizontally across the middle oven rack. You should also rotate the pan about three-quarters of the way through the bake time.

2) What if I’m baking two batches at once?

But we don’t all live in that ideal world. Sometimes you have to bake quick! When you need to get two sheets done at once, here’s our recipe for cookie success:

Place one sheet on the middle rack and one sheet on the top rack.
Add two minutes to the total bake time.
Switch the two sheets halfway through.
So, if the recipe called for a 10-minute bake time, you’d bake the two sheets for 12 minutes total, swapping their location at the 6-minute mark.

If your sheets fit on your oven racks vertically (going from front to back of the oven on the rack), place one sheet on the left side of the oven and one sheet on the right side of the middle and top racks. This helps with air and heat circulation and will keep the tops of the cookies on both sheets and even golden brown.

Flour Power: Learn about Different Kinds of Flours

Once upon a time, the typical American pantry included a single canister of flour. Today, supermarkets stock myriad milled options—reflecting increased consumer demand for diversity in the baking aisle. Whether exploring health trends, culinary interests or ethnic cuisines, here is some information your clients can use as they foray into the world of flours.

Flour is the finely-ground, sifted meal of grains, nuts, seeds, legumes or certain vegetables—and each kind of flour has a different nutrition profile and cooking or baking qualities.

Wheat Flours
Traditionally, the most prevalent flours are milled from wheat. Refined wheat flours are, by law, enriched with thiamin, riboflavin, niacin and iron, and fortified with folic acid. Whole-wheat flours naturally contain B vitamins and iron, in addition to selenium, potassium and magnesium. They also are good sources of fiber; however, whole-wheat flours may not be enriched with folic acid.

The wheat flour category alone is extensive. Ideal for bread making, flour from "hard" wheat is higher in protein—including gluten, which makes dough sticky, elastic and able to hold air bubbles formed by a leavening agent as the dough rises. Flours from "soft" wheat have less protein and less elastic quality, so they are better for delicate pastries and cakes.

All purpose flour.
Refined blend of high-gluten hard wheat and low-gluten soft wheat. Milled with only the endosperm— not bran or germ. used for baking, thickening and breading. usually sold pre-sifted. Some fortified with calcium and vitamins A or D.
100% whole-wheat flour. Made from hulled red wheat grain (wheatberries). Provides more fiber and other nutrients. Used in place of all-purpose flour. Makes a heavier bread; in baked goods, often mixed with all-purpose flour for a lighter texture and better rising. Has a shorter shelf-life than all-purpose flour. WG
White whole-wheat flour.
Made from hulled white spring wheat. Use instead of regular whole-wheat flour in baked goods for a milder taste and a light color. WG
Self-rising flour. All-purpose flour with added salt and baking soda. Convenience product not generally used for yeast breads. Leavening action of baking soda can diminish if stored too long
Cake or pastry flour.
Fine-textured refined flour made from soft wheat. High in starch. Used for tender cakes and pastries.
Bread flour. Refined flour made from hard wheat and a small amount of barley flour. Very high gluten content. Used for bread making.

The Difference Between Shrimp and Prawns

Shrimp and Prawn Anatomies
Although some aspects may not be as prominent as others, there are several parts of these crustaceans that help differentiate the two. Each of these types of shellfish have different types of gills; shrimp have lamellar (plate-like) gills, while prawns' gills are branching. In terms of their body makeup, shrimp have a side plate that overlays segments in front and behind; prawns side plates overlap tile-like from front to back. This structure affects their shape—a telltale sign whether you are eating a shrimp or a prawn is whether the body curls or not. The outer skeleton of the prawn doesn't allow it to bend at all and thus a prawn is somewhat straight. Shrimp, as we know, have a tight curl to them.

Examining their legs will also help you decipher the two. Shrimp's front pincers are the largest and they have claws on two pairs of the legs. Prawns, on the other hand, have their largest pincers on the second pair of legs and claws on three pairs of their legs. Another difference between shrimp and prawns is that shrimp carry their fertilized eggs on the underside of their bodies beneath their tails and prawns release their fertilized eggs into the water to grow.

Size and Taste
In most cases, shrimp are smaller than prawns. But don't use this as the only marker for deciphering between the two as there can be large shrimp that are bigger than a typical prawn.

Taste is also not a way of telling the two crustaceans apart. While different varieties of shrimp and prawns vary in taste and texture, those differences do not divide along "shrimp" and "prawn" lines. In short, while shrimp and prawns are not the same, their flavors are, and therefore make them interchangeable in recipes.

To Add to the Confusion
Although it is clear these two crustaceans are very different from each other, the terms "shrimp" and "prawn" seem to be used interchangeably. The words "shrimp" and "prawn" originated in England but the UK tends to refer to both of these crustaceans as prawns.

Food labeled as prawns are often larger than shrimp but aren't necessarily true prawns. Some "prawns"—such as spot prawns—are biological shrimp, and some "shrimp"—notably ridgeback shrimp—are technically prawns. And sometimes chefs and restaurant menus will label dishes slightly erroneously to make them sound more appealing, and shrimp and prawns are no exception, particularly if the recipe is ethnic in origin.

Choosing Between Shrimp and Prawns
Choose your shrimp or prawns based on what size you want and what your recipe calls for, and whether they've been caught or raised in an environmentally responsible way. U.S. wild-caught shrimp/prawns is a well-managed fishery, for example. Similarly, U.S. shrimp/prawn farms follow better practices than many others.

Along with the size and how the shrimp or prawns came to be at the store, different types definitely have different flavor profiles and qualities, making certain kinds ideal for specific dishes. Whether shrimp or prawns, it is best to buy fresh when you can because frozen shrimp and prawns often have a rubbery, tougher texture after cooking.

Delicious Shrimp and Prawn Dishes
There are many ways to cook and serve shrimp and prawns. They can be grilled, broiled, fried, sauteed, or steamed, and can be cooked with the shell on or off. The most important thing to note when cooking is that shrimp and prawns cook fast. If using them in a stir-fry dish, for example, wait until the last minute to add them as they often will cook in under 1 minute. Shrimp and prawn's mild and sweet flavor make them extremely versatile and great to pair with a variety of ingredients, from simple to complex.

You can throw shrimp on the grill and top them with lemon butter. Or marinate in hot sauce, cayenne, and garlic and before grilling to make a spicy grilled shrimp. Curry leaves, coconut milk, and chili paste add pizzazz to tasty Malaysian butter prawns.

Serve Thai fried rice with pineapple and prawns in a hollowed-out pineapple half for a spectacular presentation. And poach shrimp or prawns to use as protein-packed garnishes in a traditional Spanish gazpacho or a green gazpacho, as well as on salads to transform it into a filling dinner.
