The Process of Making Chocolate
1.The Cocoa Tree
Chocolate comes from the cocoa tree, which is formally known as Theobroma Cacao. Cocoa tree is very delicate. It requires protection from wind.
2. Harvest
Mature pods are roughly the size of a football, though some are smaller (especially in Bolivia). They are harvested by machete or shears.
3. Fermentation
It is the first critical process to develop the beans’ natural flavours. The principal effect of fermentation process transforms the flavours to what we associate with cocoa and chocolate.
4. Drying
After fermentation, the next step in the process is to dry the beans. This is usually done by spreading them out into a single layer in the sun.
5. Roasting
Roasting is done by the chocolate maker. Before roasting we carefully hand sort the cocoa beans and make sure only the good quality beans are selected to make the best chocolate.
6. Cracking & Winnowing
The roasted cocoa beans have a thin shell around them which needs to be removed, so at this point in the process, the beans are cracked open and the shell is removed in a process called winnowing.
7. Grinding, Refining & Conching
The cocoa nibs are then ground to paste known as cocoa liquor or cocoa mass. This pure, unrefined form of chocolate contains both cocoa solids (the chocolatey part) and cocoa butter (the natural fat present in the bean). Refining is the process of braking down the particle size of the paste. The other ingredients like sugar can be added at this stage. Conching develops the flavour of the chocolate liquor. This also give the smoothness and melt-in-mouth quality to the chocolate.
8. Tempering
Tempering is the controlled process of raising, lowering and raising the temperature of the chocolate to form exactly the right kind of crystals.
9. Moulding & Packing the Chocolate
The tempered chocolate can be poured to desired shapes of moulds to make the final product. The chocolate is then allowed to set. Once cooled, the chocolate is wrapped up by hand ready to be sent out.

Good quality white chocolate will have a rich, soft, and creamy texture — a characteristic that comes from its cocoa butter base and high sugar and milk content. White chocolate is unique because it does not contain any cocoa solids. The cocoa solids are what give chocolate it’s dark brown color and chocolatey taste that we all know and love. The U.S. Food and Drug Administration (FDA) sets standards of classification for each kind of chocolate. According to their definition, in order for something to be considered white chocolate it must contain at least 20% cocoa butter and 14% milk, and no more than 55% sugar.White chocolate, when stored properly, has a shelf life of about four months.

Interestingly, none of the major producers of chocolate are themselves top sources of cocoa, nor are the major cocoa-producing countries also major chocolate manufacturing centers.

Germany rang in as the world's top exporter of chocolate in 2020. Chocolate exports from Germany totaled $4.96 billion (USD) in 2020, accounting for a whopping 17% of the world's total exports.
2. Belgium 🇧🇪
Belgium is also world-renowned for its chocolates, and it is a major chocolate manufacturing center. One of the most famous chocolate companies in the world, Godiva, makes its home in Brussels. In 2020, Belgium exported $3.1 billion worth of chocolate, accounting for 11% of the world's total exports.
3. Italy 🇮🇹
Italy is well-known for its chocolates and principal chocolate manufacturers. The production of chocolate is an important source of wealth for the country. In 2020, Italy exported $2.1 billion worth of chocolate, accounting for more than 7% of the world's total chocolate exports.

Hi, today we share a simple recipe for making chocolate chip cookies
This is a really basic recipe that only uses 5 ingredients.
1. 3 cups all-purpose flour
2. ¾ cup brown sugar
3. 2 eggs
4. 1 cup butter
5. 1 cup semi-sweet chocolate chips
Instructions
Step 1
-Preheat oven to 350 degrees F (175 degrees C).
Step 2
-Sift flour and brown sugar into a bowl; stir in eggs. Mix butter into flour mixture until dough is creamy; fold in chocolate chips. Spoon dough onto a baking sheet, keeping them about 3 inches apart.
Step 3
-Bake in the preheated oven until slightly brown, 10 to 15 minutes.Cool and ready to eat.

tersebut akan meleleh ketika masak dalam proses pemanggangan. Namun ternyata, sebuah resepi kuih klasik telah lahir dihadapannya.Chocolate chip cookie pertama kali disebut "Butterdrop do Cookies".
