✨🐟 潮州式蒸斗昌|一帆风顺年年好 🧧

新年餐桌上,少不了这道好意头的鱼料理。
因为它寓意着一帆风顺,象征新的一年顺顺利利、事事如意 ❤️

以清蒸方式原味呈现,完整带出鱼的自然鲜甜,是团圆饭桌上简单却很有心意的一道好菜。

📝 材料
斗昌
豆腐
番茄
五花肉
咸菜
咸水梅
香菇
姜片


胡椒粉
青葱丝

做法:
1. 将香菇切片、姜切片、青葱切丝备用。
2. 在香菇中加入少许盐、糖、胡椒粉(依个人喜好)和少许油拌匀,腌一下让香气更突出。
3. 同时把番茄、豆腐、咸菜和已汆烫的五花肉准备好备用。
4. 用小刀轻轻刮去斗昌表面的鳞片。
5. 沿着斗昌背部顺着鱼骨轻轻划开,不必切断(让鱼更容易熟透)。
6. 用咸水梅在鱼表面轻轻擦拭,静置约 5 分钟,帮助去血水、减腥味。
7. 小贴士: 盘子中间放一支叉子,将鱼稍微垫高,蒸时两侧受热更均匀。
8. 开始摆盘,先放入豆腐块。
9. 将斗昌放在豆腐上,放入姜片。
10. 把五花肉塞入鱼背开口处,剩余的铺在鱼周围。
11. 加入咸菜,放上腌好的香菇。
12. 淋上少许咸梅汁提味,并加入清水。
13. 放入蒸锅,大火蒸约 20 分钟至熟。
14. 取出后撒上青葱丝即可上桌。

✨🐟 Teochew-Style Steamed Pomfret | Wishing You a Successful & Prosperous Year 🧧
No Lunar New Year table is complete without this auspicious fish dish.
It symbolizes smooth sailing, wishing you a year that goes smoothly and beautifully ❤️

Steamed to preserve its natural sweetness, this simple yet meaningful dish is perfect for a warm reunion meal.

📝 Ingredients
Pomfret
Tofu
Tomato
Pork belly
Salted vegetables
Salted plum
Shiitake mushrooms
Ginger slices
Sugar
Salt
White pepper
Shredded spring onions

👩‍🍳 Method
1. Slice the shiitake mushrooms and ginger, and shred the spring onions. Set aside.
2. Season the mushrooms with a little salt, sugar, white pepper (to taste), and a small amount of oil. Mix well and let them marinate briefly to enhance the aroma.
3. Prepare the tomatoes, tofu, salted vegetables, and pre-blanched pork belly in advance.
4. Gently scrape the surface of the pomfret with a small knife to remove any remaining scales.
5. Lightly score along the back of the fish following the bone without cutting through (this helps the fish cook more evenly).
6. Rub the fish with one salted plum and let it rest for about 5 minutes to remove excess blood and reduce any fishy smell.
7. Tip: Place a fork in the center of the plate to slightly elevate the fish for more even steaming.
8. Begin plating by arranging the tofu cubes on the plate.
9. Place the pomfret on top of the tofu and add the ginger slices.
10. Stuff the sliced pork belly into the slit on the fish back; arrange the remaining pieces around the fish.
11. Add the salted vegetables and the marinated mushrooms.
12. Drizzle a little salted plum juice over the fish and add some water.
13. Steam over high heat for about 20 minutes until fully cooked.
14. Garnish with shredded spring onions and serve hot.

今天和大家分享一道家常美味无油炸咸蛋苏东,简单又下饭,让新年的餐桌更加丰富美味!🐙

材料:
苏东(鱿鱼)
咸蛋
蒜米
咖喱叶
牛油
淡奶



做法:

1. 将咸蛋切碎备用。把苏东切成圈状,撒上少许盐和糖,搅拌均匀后静置约 10 分钟,让苏东更入味、口感更鲜美。
2. 锅中加水煮滚,将腌制好的苏东倒入锅中烫,煮约 2-3 分钟,苏东开始微微卷起即可捞出,稍微冷却备用。
3. 准备炒锅,锅中加入少许牛油,小火加热至融化。
4. 加入切碎的蒜米和咸蛋碎,翻炒均匀。
5. 加入咖喱叶继续翻炒,炒至咸蛋出沙、香气四溢。
6. 根据口味加入少许盐和糖,再倒入少许淡奶,翻炒均匀。
7. 加入烫好的苏东,继续翻炒至均匀裹上酱汁。

美味的咸蛋苏东就完成啦!✨

Today, we’re sharing a simple and flavorful Non-Fry Salted Egg Sotong, perfect for a festive, family-style dinner!🐙

Ingredients:
Squid
Salted eggs
Garlic
Curry leaves
Butter
Evaporated milk
Salt
Sugar

Method:
1. Finely chop the salted eggs and set aside. Slice the squid into rings, season lightly with salt and sugar, mix well, and let sit for 10 minutes to enhance flavor.
2. Bring a pot of water to a boil, blanch the squid for 2–3 minutes until it just starts to curl. Remove and let cool slightly.
3. Heat a pan over low heat and melt a small amount of butter.
4. Add the minced garlic and salted egg, stir-fry until fragrant.
5. Toss in the curry leaves and continue stir-frying until the salted egg turns creamy and aromatic.
6. Season with a pinch of salt and sugar, add a splash of evaporated milk, and mix well.
7. Add the blanched squid and toss until evenly coated in the salted egg sauce.
