🎨 Appearance: Golden yellow with silver highlights, featuring a steady chain of fine, persistent bubbles

👃 Aromas: Lemon curd, applesauce, honeycrisp apple, peach, apricot, toasted brioche, with an ultra-fine hint of coconut

👅 Tasting Notes: Dry and medium-bodied with balanced acidity. Flavours of white grape, apple, pear, and lemon peel, finishing long and smooth with subtle salinity and dried fruit notes

🍇 Grape Varieties: 90% 70-year-old Grenache Noir, 10% 50-year-old Mourvèdre

🎨 Appearance: Deep ruby, often translucent at the rim with age

👃 Aromas: Red fruits, red cherry, raspberry, earthy notes, and baking spices

👅 Tasting Notes: Full-bodied with high alcohol, silky yet dense acidity, red fruits, and a long finish with lingering notes of cherry, pepper, and dried herbs

🍴 Perfect Pairing: Beef rib, roast lamb, duck breast, venison, roast chicken, or aged cheeses like Gouda, Gruyère, or Manchego

❤ About the Wine: Grapes are hand-picked with double sorting at the vine and a third sorting in the winery. Gentle crushing and destemming, followed by at least 30 days of traditional fermentation in concrete and wooden vats. Finished with pneumatic pressing and malolactic fermentation for layered complexity and depth.
