Lime. Mmmmm.... Another of Trio in our Trio Citrus Marmalade.
In a country like Kenya where all the fruit is superlative, we would be lost without the humble lime. We add it to coconut dishes, fish, and samosas, we squeeze it on papaya, avocado and cassava. Those who enjoy its cleansing benefits will squeeze it into hot water in the morning for a refreshing start to their day. It also livens up a glass of cold water or cranberry juice. Not to mention its supporting act in the perfect gin and tonic.
For our marmalade, we use every bit of this small and perfectly formed fruit. Not just the flavoursome zest and juice, but also the pith and pips for the all important pectin.
