Our chef presents his take on stuffed squash blossoms, a flavorful recipe that captures the essence of spring.

FOR THE STUFFED SQUASH BLOSSOMS YOU WILL NEED:
10–12 zucchini blossoms
350 g cow’s milk ricotta
100 g grated Parmesan cheese
8 anchovies in oil
200 g sun-dried tomatoes in oil
For the tempura batter:
250 g rice flour
250 ml cold beer
1 teaspoon baking soda
1 liter oil for frying
For the sauce:
Set aside 2 tablespoons of blended sun-dried tomatoes and anchovies, then add:
2 tablespoons mustard
Juice of 1/2 lemon
