Are these the only tomatoes for making passata? No, not at all. In the end, you can make it from any tomato. But it would help if you looked for fleshy tomatoes because they give the best results. I dream of working with Piennolo tomatoes from Vesuvius or Cilliegino from Sicily. πŸŒ‹

Every year we would look forward to summer so we could finally restock our cellar with fresh homemade passata. The production process felt like a marathon initially, as we started with a few dozen kilos and a small passe-vite. But every year, we added a few kilos and bought extra equipment to help us.πŸ› 

But in the end making passata is all about choosing the best tomatoes and the best method and rules (sΓ¬, every family has its unique way).πŸ‘©β€πŸ”¬ My family and I make tons of passata every year for pleasure and because we believe we can do better. πŸ”₯
While processing our tomatoes one year, I realised that Italians live primarily from their pantry. They learn this from an early age. Even when the empty fridge is staring at them sadly, they can conjure up a delicious "pasta cu la sarsa" to satisfy about twenty hungry stomachs. 🍝 And then I realised that charm is lost in this 1-2-3 meal box world. πŸ“¦ We only go to the shop when we need something, and when we want to "eat well", we go out. We forgot how to prepare for the unexpected and how passion and tradition taste in our kitchen. πŸ§‘β€πŸ³
And so the idea was born for CULASARSA, Sicilian for pasta "with tomato sauce". A place where the best, authentic products are brought together with a passion so you and your guests can taste, feel and be completely fulfilled by the love of food.🫦

Who doesn't love the warmth of the sun caressing their skin? πŸ’›

Ignore the stove and don't miss the chance to enjoy some of our favourite summer dishes. For lunch, we love the classic prosciutto e Melone or Insalata Caprese, minimum effort but gives maximum enjoyment. πŸˆπŸ… But if you have bread in the house, I would make some Tuscan Panzanella, made with bread, tomato, onions, basil and some EVO and vinegar.

Or you could treat yourself with a mighty spaghetti all Vongole after 8 pm when it has cooled down. 🍝

Whatever you eat, always have a refreshing aperitivo at hand! πŸΉπŸ˜‰

Happy Cannoli day!

Today we honour one of my favourite pastries that originated in Palermo.

The Cannolo, the tubelike pastry, is a world-famous Sicilian pastry delicacy. The shell is fried and filled with a slightly sweet and creamy ricotta filling. The quality of the ricotta cheese makes or breaks the Cannolo, in my opinion.

I like my Cannoli topped off with homemade candied fruits at the end. But I wouldn't say no to a Cannoli dipped in pistachios or chocolate.

I love to make this pasta myself, pure therapy and super easy with our ferretto! Busiate is probably one of the oldest handmade Sicilian pasta shapes. They look like an old school telephone cord πŸŒ€which makes them perfect for pesto like sauces.

Busiate are made from durum wheat flour and water, no egg! I prefer a dough ratio of 67% semola rimacinata and 33% of water. But you could also skip the dough making and shaping and buy busiate straight from our shop! πŸ˜‰

Personally i'm not a breakfast person and mostly don't eat before 10:30 but I always have coffee doesn't matter how early it is.

I must say Italian breakfast is perfect for me, it's quick and it gives you that instant energy punch to start the day!πŸš€

Culasarsa exists for them to tell their story and help them show the world what REAL Italian food is.

It isn't easy to meet new producers through this setup. Culasarsa wants to give a platform to people who honor tradition, culinary heritage and are devoted to staying as close as possible to themselves and the products they produce, without any compromises and in control from start to finish.

Content creation is the most underestimated job, in my opinion. πŸ˜… Luckily, Culasarsa is always open, 24/7!

I struggle with dividing my time between my main job and culasarsa. Orders get priority over content production. Culasarsa is a one-woman's business, But it's no excuse!
I started culasarsa to spread good and honest food and teach people what real quality produce is. If I want to spread this message, I need to produce πŸ₯΅ -note to myself-

That's why I am in Firenze this weekend. To refuel, to meet up with some of our producers and hopefully to find some new ones.

I'm figuring out how to battle this content monster 🀣 but first, I need some pasta! 🍝
