Vegetable Paratha
If you and your child don’t like to eat vegetables alone, then this Indian flatbread is a delicious way to get their goodness Veg paratha is a delicious and nutritious traditional Indian bread prepared with lots of fresh vegetables, herbs and spices and wheat flour. Perfect for kid's breakfast, lunch box and snack box. There is no need for any special side dish for this paratha as it is very tasty on its own. If required, you can have it with curd or pickle or just a simple raita.

Cook time -under 15 mins
Ingredients needed
Wheat flour - 11/2 cup
Salt - 1/4 tsp
Oil - 2 tsp
Stuffing
Potato (medium size) – 2 no
Peas -1/4 cup
Carrot and cabbage together (finely chopped)- 3/4 cup
Coriander leaves (finely chopped) -1/4 cup
Oil - 1 tbsp
Cumin seeds/jeera -1 tsp
Onion (medium size)-1 no
Ginger garlic paste - 1/2 tsp
Red chilli powder -1 tsp
Turmeric powder -1/4 tsp
Garam masala -1 tsp
Coriander powder -1 1/2 tsp
Salt- to taste
Wheat flour for dusting
Oil for frying parathas
Method
1. In a bowl, mix together wheat flour, salt and oil.
2. Add little water at a time and prepare a soft dough.
3. Grease your hands with 1/4 tsp oil and knead the dough well. Keep it covered.
4. In the meantime, prepare the stuffing for the paratha.
5. Pressure cook potatoes and peas. Cool it, mash potatoes well and grind peas to a paste.
6. Mix mashed potato and peas together.
7. Finely chop onions, carrot, cabbage and coriander leaves using chopper.
8. Heat oil in a kadai, add cumins seeds, when it splutters, add ginger garlic paste and saute it then add, finely chopped onions and saute for few minutes.
9. Add all the vegetables and cook it.
10. Then add potato and peas mixture, all the spice powder, salt needed and cook covered in medium low flame until everything gets mixed well.
11. Let the mixture cooled.
12. Once cooled, make balls out of the mixture.
13. Now make even sized ball out of the dough. Roll out the ball into a small circle by dusting wheat flour.
14. Keep a ball of stuffing in the center and gather all the corners, seal it well and press it lightly.
15. Roll out the sealed dough by dusting flour into a circle Repeat the same process for the rest of the dough.
16. Heat a tawa and put the rolled out paratha on it. Spread a tsp of oil all over the paratha and flip it over to the other side. Spread another 1/2 tsp of oil on the other side and cook well on both the sides.
17. Repeat the process for the rest of the rolled out dough.
18. Serve paratha with curd or pickle or raita.
