BENEFITS OF COLD PRESSED OIL OVER REFINED OIL

When it comes to cooking oils, there is an endless debate on which one is the healthiest choice. From canola oil to olive oil, people have different choices when it comes to picking a cooking oil. There is a similar debate which goes on between refined and cold-pressed oil. Refined oil might be the most used variant but cold-pressed oils are now widely adopted by people all across the globe, because of its long list of health benefits. Read on to know why is cold-pressed oil better than refined oil.

2. Process of making
Refined oils are extracted using high heat. Also known as hot-pressed oils, refined oils are made by first cleaning them, then grinding them at high speed, which can generate heat up to 200°C and using some chemicals, which finally gives us the oil.
On the other hand, cold-pressed oils are crushed slowly to extract oil from them. No heat is generated during the process. This also helps in retaining the nutrients and the flavours.
Traditionally, words like “Chekku”, “Ghani” and “Kolhu” oil were used in India to describe cold-pressed oil. In fact, in olden times, a long cylindrical instrument, known as 'ghani' was used to extract oil from oilseeds.

3. Are cold-pressed oils healthier?🧐
Cold-pressed oils are definitely healthier than refined oils. Most of the nutritive capacity of refined oil is lost after they are exposed to high heat and chemicals.
The case is completely different in cold-pressed oils, which retain most of their nutrients because of a heat-free and chemical-free manufacturing process. Most cold-pressed oils are rich in vitamin E, which has anti-inflammatory properties and oleic acid, which boosts your immunity.

4. Nutritional value💪
Cold-pressed oils are rich in essential fatty acids, antioxidants, vitamin E, vitamin K, vitamin C, and other healthy fats as they preserve the potent nutrients of their ingredients and maintain their natural form. Thus, consumption of cold-pressed oils is considered safe and healthy, especially for people with chronic disorders. Excessive heat destroys the potent compounds of the seeds or nuts while processing and the further treatment of hot-pressed oils with chemicals such as acetic acid, hexane, and bleaching soda destroys all the nutrients. While consuming cold-pressed oils can protect the heart by reducing bad cholesterol and blood pressure levels, intake of refined oils in everyday diet can increase the risk of strokes and heart attack significantly.

5. Shelf-life
“Regular oils undergo hydrogenation process and are further treated with harmful chemicals to increase their shelf-life and yield capacity. On the other hand, since cold-pressed oils are unfiltered and minimally processed, they have a shorter shelf-life and produce a lower yield. For this reason, hot-pressed or regular oils are relatively cheaper than cold-pressed oils with greater quality.

6. Cooking method
Cold-pressed oils are suitable for food prepared in medium to low heat due to their low smoking points whereas hot-pressed oils are preferred for preparing meals at high temperatures due to their high smoking points.
Making a switch from regular oil to cold-pressed oil can be difficult and expensive, but this little transformation can make a big difference to your health and well-being. HOW REFINED COOKING OIL IS MADE

1. Raw Materials
The average bottle of cooking oil contains vegetable oil, with no additives, preservatives, or special flavorings. The oil comes from various parts of plants, in most cases from what are commonly called seeds (including sunflower, palm kernel, safflower, cotton, sesame, and grapeseed oils) or nuts (including peanut, soybean, almond, and walnut oils).

2. Cleaning and grinding
• Incoming oil seeds are passed over magnets to remove any trace metal before being dehulled, deskinned, or otherwise stripped of all extraneous material. In the case of cotton, the ginned seeds must be stripped of their lint as well as dehulled.
• The stripped seeds or nuts are then ground into coarse meal to provide more surface area to be pressed. Mechanized grooved rollers or hammer mills crush the material to the proper consistency. The meal is then heated to facilitate the extraction of the oil. While the procedure allows more oil to be pressed out, more impurities are also pressed out with the oil, and these must be removed before the oil can be deemed edible.

3. Pressing
• The heated meal is then fed continuously into a screw press, which increases the pressure progressively as the meal passes through a slotted barrel. Pressure generally increases from 68,950 to 20,6850 kilopascals as the oil is squeezed out from the slots in the barrel, where it can be recovered.

4. Extracting additional oil with solvents
• Most oil seeds with more oil are pressed and solvent-treated. After the initial oil has been recovered from the screw press, the oil cake remaining in the press is processed by solvent extraction to attain the maximum yield. A volatile hydrocarbon (most commonly hexane) dissolves the oil out of the oil cake, which is then recovered by distilling the light solvent out. The Blaw-Knox Rotocell is used to meet the demands of the United States soybean oil industry. In using this machine, flakes of meal are sent through wedge-shaped cells of a cylindrical vessel. The solvent then passes through the matter to be collected at the bottom. The solvent percolates through the matter which is periodically dumped and replaced.

5. Removing solvent traces
• Ninety percent of the solvent remaining in the extracted oil simply evaporates, and, as it does, it is collected for reuse. The rest is retrieved with the use of a stripping column. The oil is boiled by steam, and the lighter hexane floats upward. As it condenses, it, too, is collected.

6. Refining the oil
• The oil is next refined to remove color, odor, and bitterness. Refining consists of heating the oil to between 107 and 188 degrees Fahrenheit (40 and 85 degrees Celsius) and mixing an alkaline substance such as sodium hydroxide or sodium carbonate with it. Soap forms from the undesired fatty acids and the alkaline additive, and it is usually removed by centrifuge. The oil is further washed to remove traces of soap and then dried.
• Oils are also degummed at this time by treating them with water heated to between 188 and 206 degrees Fahrenheit (85 and 95 degrees Celsius), steam, or water with acid. The gums, most of which are phosphatides, precipitate out, and the dregs are removed by centrifuge.
• Oil that will be heated (for use in cooking) is then bleached by filtering it through fuller's earth, activated carbon, or activated clays that absorb certain pigmented material from the oil. By contrast, oil that will undergo refrigeration (because it is intended for salad dressing, for example) is winterized—rapidly chilled and filtered to remove waxes. This procedure ensures that the oil will not partially solidify in the refrigerator.
• Finally, the oil is deodorized. In this process, steam is passed over hot oil in a vacuum at between 440 and 485 degrees Fahrenheit (225 and 250 degrees Celsius), thus allowing the volatile taste and odor components to distill from the oil. Typically, citric acid at. 01 percent is also added to oil after deodorization to inactivate trace metals that might promote oxidation within the oil and hence shorten its shelf-life.

7. Packaging the oil
• The completely processed oil is then measured and poured into clean containers, usually plastic bottles for domestic oils to be sold in supermarkets, glass bottles for imports or domestic oils to be sold in specialty stores, or cans for imports (usually olive oil).

Coconut oil contains no cholesterol, no fiber, and only traces of vitamins, minerals, and plant sterols. Plant sterols have a chemical structure that mimics blood cholesterol and may help to block the absorption of cholesterol in the body. However, the amount found in a few tablespoons of coconut oil is too small to produce a beneficial effect.
In recent years, the popularity of coconut and particularly coconut oil has soared because of touted health benefits. Fueling the coconut oil trend, celebrity endorsements have claimed the ingredient to help blast away belly fat, curb appetite, strengthen the immune system, prevent heart disease, and stave off dementia and Alzheimer’s disease. A survey found that 72% of Americans rated coconut oil as “healthy,” though only 37% of nutrition experts agreed.
Although epidemiological studies find that groups of people who include coconut as part of their native diets (e.g., India, Philippines, Polynesia) have low rates of cardiovascular disease, it is essential to note that many other characteristics, dietary and other, could be explanatory. Also, the type of coconut they eat differs from what is used in a typical Western diet.
