We start by making our strawberry preserve in-house using fresh strawberries, cooked slowly to bring out their natural sweetness and flavour.
That preserve is layered into our Strawberry Fudge Cake with a rich dark chocolate base made using cocoa powder, and finished with a smooth dark ganache topping.
Made with our own 52% chocolate buttons, this is one of those cakes that you’ll come back again for.

Being truly bean-to-bar means every step matters, starting right from the cocoa bean itself. After harvest, the fresh wet beans are carefully fermented in wooden boxes for five days which is an essential process that develops the deep flavour notes that later unfold during roasting. The beans are then slowly sun-dried for another five days, allowing moisture to reduce naturally while preserving their rich aroma and character. By overseeing these stages ourselves, we ensure that the flavour of our chocolate is shaped from the very beginning, not just at the final stage.
