Yummy Kalybung ko acchar !

Typical Indian sub continent dishes always presented with 'pickle'. Pickles act as an appetizer and every one of us are obsessed with it. Pickle bases used in India differes from place to place. Taste, flavour, bases, ingredients and its process of preparation is highly diversified. Market is flooded with varieties of pickles and most common is raw mango blended tangy mixed pickle. But Gorkhas of Darjeeling have exceptionally uncommon pickles where the primary base that we use is cherry chillies with mustard oil or Salt. It is surprisingly hot and spicy but then it helps us to maintain our posture and keep us moving regardless of how extraordinary the climate and situation is. With time we have taken our obsession with pickle to a whole new level, twisting and trying out new experiments. Some experiment might have been successful cause we have started using new pickle bases. For instance take dried pork pickles or Niger seeds (filingay) pickles. Now a days we use various locally grown items like fenugreek seeds, dried chicken meat, pork, Nepali hog plum (lapsi) or Tamarillo.
The most famous out of all these pickles are that of, radish, fermented mustard leaf (gundruk), fermented soybeans, bamboo shoot, lemon, cucumber, etc.
There are many small cottage industries ventures across Darjeeling and Sikkim which have earned fames by preparing varieties of pickles one such brand is Renu didis Gorkhay kosailai from Kalimpong.
