Coconut Oaty Flapjacks 🥥

Ingredients:
225g oats
225g plain flour
225g sugar
100g dedicated coconut
225g butter
2tblsp golden syrup
Chocolate to melt (optional)

Method:
🥥 Preheat oven to 180*c and line deep baking tin with baking paper
🥥 Mix dry ingredients
🥥 Melt butter and golden syrup on a low heat.
🥥 When melted add to the dry ingredients and mix well.
🥥 Flatten evenly in the baking tray and bake in the oven for 10-12 minutes
🥥 When fresh out of the oven, score and then allow to fully cool in the tray.
🥥Drizzle in chocolate, slice and enjoy.

The sun is out let’s make some Passion Fruit Sorbet ☀️

Ingredients:
* 1 cup sugar
* 2 cups water
* 1 cup passion fruit puree

Method:
1. In a small saucepan, combine sugar and water. Bring to the boil. Let it cool, and stir in passion fruit puree. Transfer to an ice-cream maker, and freeze according to manufacturer’s instructions. The sorbet can be stored in the freezer in an airtight container for up to a week.

Guinness Brown Bread

Ingredients:
320g wholemeal flour
50g porridge oats + extra for the top
100ml buttermilk
300ml Guinness
2 tsp baking soda
4g salt
2 tblsp olive oil
45g black treacle

Method:
1. Preheat the oven to 200C. Butter and flour a loaf tin.
2. Mix the dry ingredients in a large mixing bowl. Add the buttermilk, oil, treacle and Guinness and mix well to combine.
3. Pour the mix into the loaf tin, top with some extra oats and pop in the oven for about 1 hour. When tested with a knife it will come out clean.
4. Allow it cool in the tin for 5 minutes before transferring onto a wire rack.

Lamb Curry 🍛

Make sure to save this for a comforting midweek dinner 💌

Ingredients:
1 lime-zest and juice
3 garlic cloves crushed
800g diced lamb
3 tblsp coconut oil
1 onion finely chopped
2 tsp curry powder
1 tsp cumin
400mls coconut milk
2 tbsp tomato purée
1 tbsp to***co
2 tsp agave
Chopped corriander

Method:
Mix the lime zest, juice and garlic.
Add lamb and marinade for 2 hours.
Heat the coconut oil and fry the onion for 5 minutes.
Drain the lamb and brown the lamb with the onion.
Add in the cumin and curry powder. Cook for 1 minute
Stir in the coconut milk, tomato purée, to***co and agave. Cook for 5 minutes.
Reduce the heat to a simmer and cook for 1 1/2 hours. Stirr occasionally.
Garnish with corriander. Serve with rice and naan bread

Lemon curd cruffins 🍋

💌 Save for brunch next weekend

Ingredients:
2 packs of croissant dough
25g brown sugar
30g softened butter
1 egg
Caster sugar to dust
Jar of lemon curd

Method:
Pre-heat oven to 180*c and grease muffin tray.
Unroll croissant dough and lay on a lightly floured surface. It will look like a long rectangle. Cut dough in half vertically and lay one layer on top of the other. Roll once of twice with lightly floured rolling pin so the dough comes together.
Spread half the butter on top of the dough and sprinkle with half the brown sugar.
Roll the dough away from you into a log shape. Cut the log in two.
Repeat the process with the second pack of dough. You’ll end up with 4 logs.
Cut each log lengthways exposing the layers.
To make the cruffin shape twist the dough into a knot and roll and excess around it.
Place into the greased muffin tray, wash with egg and bake for about 15 minutes until golden.
Remove and cool completely on a wire tray.
When cool dust in caster sugar and make a hole in the top of each one.
Spoon some lemon curd into the cruffin and serve.
