Have you ever made your own Paneer? We have some milk left at the shop which is perfect for the job! Pop in before 5 and grab a carton to give it a try :)

Paneer:
Indian cheese, creaminess of mozzarella but can be soft like ricotta or pressed to create a firmer texture.

Fabulous with a simple marinade and BBQ'd on skewers with red onion, peppers and tomatoes/ in a spinach and paneer curry/ as bruschetta (see below) or delicious for breakfast just plain in pancakes.

How to make fresh paneer

I litre whole milk (full cream is best, like our local organic Tynet Farm Milk)
3tbsp lemon juice or 1/3 cup of yoghurt

Bring the milk to a boil in a heavy based saucepan.
Turn the heat down a little. Once the milk starts to rise in the pan add in the lemon juice or yoghurt and keep stirring until the milk splits into curds and whey. (Add more lemon juice or yoghurt if nothing happens !)
Remove from the heat and drain through muslin or linen.
Make a little round bundle of the paneer in the muslin, twisting the ends of the muslin. Plunge into ice cold water (or just straight from the tap seems to be cold enough here!)
Then hang the bundle to drain for a while over a bowl or the sink.
Place on a board near the sink and put a heavy pan on top so that the cheese is pressed.
For a softer cheese leave for 15-20 min, otherwise press for longer.

(Keeps in its cloth for a day in the fridge or in a klick lock box for about 4 days , again in the fridge)

Makes 160g

Anjum Anand's recipe for Paneer bruschetta:
1x recipe fresh paneer
3tbsp finely chopped onion
2 green chillies finelt sliced
Large handful of finely chopped coriander, leaves and stalks
2 big tbsp good quality olive oil
150g baby tomatoes
Black pepper and salt

Mix all ingredients together. Let marinate for about 10min. Lightly toast sliced baguette/ ciabatta. Spread with the mixture.
Makes 8-9

On the 19th and 20th of June, so make sure to have a rummage in your wardrobes, find any items that need a new home and get them into the fair if you'd like to.

Mending Sessions are back!

Thanks to a small pot of funding from the Community Council EDF community grants, we are pleased to bring back Mending Sessions for the rest of the year 😀 With the next session taking place on Monday 1st June.

These are a chance to set aside some time to mend those items that are sat in your repair pile, continue a creative project, and come together with like minded souls to share learning, experience and have a good natter.

We will have the lovely Lu Underwood on hand to help, and there may even be cake 😋

Drop in anytime fro 6.30-9pm, suggested donation £5.
If you are able, please do let us know if you plan to attend so we can make sure we have enough chairs.

We are trying a Monday night this time, but can do another night next time once we see what suits people best.
