What's been going on this summer.....

Whilst its been too hot to make chocolate, it is not a case of me sitting idle (it never is) I have been busy in the background thinking up new and exciting things to bring you in September.

I've been fortunate enough to have saved some money and got myself a few items of chocolate making equiptment to help me on my journey as things have been growing at a rapid pace in recent years.

I bring you my newest idea! Chocolate spreads and sauces!

Pictured is my newest creation, Vanilla Hazelnut Praline Cream! A truly rich and indulgent little extra to any pudding of your choice and (purely for advertising purposes - definetly not because I wanted to eat it) I showcased my Vanilla Hazelnut Praline on a slice of triple chocolate cake with vanilla ice cream and mint leaves.

I've also made a Pistachio and Vanilla Cream for those of you who love nuts (yes, your allowed to snigger at that, i did). 🀣πŸ₯°πŸ₯°

Hi Everyone!

I hope you are all enjoying your summer holidays?

I am really excited to say I have finally (after 2 years) taken the leap and invested in some new proper chocolate making equipment! Until now I have always melted my chocolate in the microwave and used a tempering method called "seeding" which is where you melt chocolate to roughly 40 degrees, and then seed in some unmelted chocolate to re-introduce the beta crystals that keep the chocolate snappy and shiny and retempers it, if you didn't do this it would be soft and floppy and just - Yuck.

My new equipment includes a chocolate tempering machine that can hold 4.5kg of chocolate at once, and something called a malenger which grinds things into very smooth pastes, I have also invested in a airbrush! So soon i'll be able to get even more creative with my artistic flair I give the outsides of the chocolates by painting with cocoa butter!

Hopefully this will mean when I return in September I can make more chocolate for you each week and not run out as often (something I have struggled with since day 1) it will also mean if I wanted to I could even make my own chocolate using cocoa beans! But my plan is mostly to use it to make silky smooth nut pralines and hazelnut spread type fillings - but overall it means I have the ability to get a bit more creative with flavours and textures which is something I am very passionate about!

This christmas is going to be fun let me tell you.....

⭐ I did it! ⭐

I'm so excited to share that Willowbean Chocolate has been awarded a Great Taste 1 Star Award for my Calamansi and Welsh Honey Chocolate with the judges saying "What an attractive chocolate - well-executed, pretty, striking, inviting. There was plenty of pleasing citrus and sweetness on the palate, followed by a rich moment of white chocolate at the end. We felt the two elements were in good harmony. This was an interesting, very nicely-judged treat."

I'm also thrilled to have won a 1 star award for my Brandy Caramel Chocolates with the judges commenting "These look handmade and very appealing. The shell has a sound snap and is impressively thin. The ganache delivers a good mouthfeel with a lovely smooth finish. This is knowledgeably made chocolate"

Knowing my chocolates were judged completely blind by such an experienced panel makes this incredibly special. As a tiny business making every chocolate by hand here in rural Wales, this means the world.

Thank you to everyone who has supported Willowbean – I can't wait for you to try my award-winning chocolate when I return in September!

**CLOSURE FOR SUMMER**

Hi Everyone,

I've just seen via Met office that we are yet again meant to be going into another heatwave this week, which seems to have changed from what I had read last week.....

As you all know, as well as a chocolatier and goldsmith I am also a mum of 3, all of which are home with me and under my care WHILST i try and run 2 buisnesses alone.

With the weather remaining too warm to safely post, and with my children here I am really sorry to say I am going to have to stop production until September when the summer has passed. It's been really tough this past few weeks, my children have been at home and I just cannot safely make chocolate with them here. The children coming in and getting bread or biscuits out poses a real risk of cross contamination and I just can't risk someone getting poorly from a allergen that might have made its way into the chocolate!

I really hope you'll all stick by me, and understand why I have made this choice, I ADORE cooking and making you all lovely little treats but right now I am really struggling to find the time or to be able to make sure I do it all safely.

I will be posting tomorrow as the last day until I return - for now any chocolates you may like to buy are on my website and I'll get them out to you tomorrow while its still cool enough.

I also find out tomorrow about the great taste awards, so fingers crossed when I come back in Septermber I might come back as "award winning!"

Hi everyone,

I am so sorry to have to say that this week I won't be making any chocolate.

I know you have been deprived for weeks now, this weather is just too risky to be posting chocolate in, and even if I could - My kitchen is a temperature at the moment I just cannot accurately temper chocolate in, so production isn't even possible at the moment.

If the weather continues not to cool down, I really don't know how long I'll be out of action... I am so sorry to all of you that have regularly supported me over the past 2 years, You are hugely valued and I feel really sad to have let you down.

Fingers crossed that I'll soon be able to get back to making chocolate. As many of you know, before the chocolate I was a trained Chef however Autism and Chef work do not go together, I do not handle stress well, so in the meantime Its Focaccia I've been making.....at least that can withstand this heat!

With schools breaking up here in Wales, I thought these would make a lovely little thank you for teachers, teaching assistants, nursery staff... or, let's be honest... yourself. πŸ˜…

Each chocolate is made by hand in my little workshop using sustainably sourced chocolate and as many lovely local ingredients as I can get my hands on.

Because of the heat, these will be collection only this week, and I'll only be making a small batch.
