Im sorry there i havent posted lot on here in the last few months. Starting of as a new project is hard but due to this covid, it made it harder but in the new year i will pull it together and and get these amazing flavours out so you can try.
So please dont give up on me but i will get it together and get the artisan dry cure bacon out there. Merry Christmas everyone.

Try something new this Christmas instead of the normal pig in blankets or it doesn't have to be for Christmas.
What we have here is 2 different types.

Welsh dragon sausage meat wrapped in my dry cure chilli bacon.

Or the other is.

Pork and leek sausage meat wraped in my dry cure bourban bacon.

This year I'll be doing Christmas limited addition pig in blanket of the pork, cranberry and mulled wine wrapped in a sage and onion bacon.
But i can do the same as the picture below.
