I’m really pleased with the combo of materials on this one. The wrought iron cladding on the blade had a little yellowing to it after being etched. I wanted to mirror the beautiful patterns of the wrought iron in the handle and I’m a big fan of This is a smaller petty than I usually do, but a perfect accompaniment to a full sized Gyuto or Bunka. This Santoku came out particularly well with its combination of Damascus San Mai & spalted Guava. Everything just came together nicely from the profile to the simple rounded hidden tang handle. This one sold on its first outing. Was slightly sad to see it go so quickly, but there will be others based of the same principles. Shout out to for the steel and for the wood 🪵

The Piano Bunka. Made from a combination of Dark Mai, Ebony & Elforyn Supertusk. I love the way the simpler materials really show the facets. I wanted this build to be bold with plenty of contrast and feel a little timeless. With a blade at just over 160mm long and around 60mm tall it’s a great all rounder for both the amateur & professional chef. Thanks to for the beautiful steel. No animals were harmed in the making of this knife 🐘

If I could only make one shape of kitchen knife it would probably be the Bunka. It’s the knife I reach for most in my kitchen and at 7” long it is so versatile. This was a pretty special build using some beautiful desert ironwood burl supplied by This is one of the nicest examples I’ve seen. The great thing about this material is how dense it is, making it a great choice for a kitchen knife. This one is getting put to use in a busy kitchen and the stability of this material gives me peace of mind that it will last for years to come.

I’m calling this one “dark side of the moon” due to the combination of Dark Mai & Moon Ebony. This is easily my favourite build to date. 7” Bunka with a slightly odd construction as it’s a frame handle with a buffalo horn bolster. The handle is faceted with rounding on the under side. I wanted the handle to slightly mirror the nickel lines through the blade. I absolutely love the black & tan combo. This will be going up on the website on Monday.
