Macarons with white chocolate buttercream🤩
We’ve discovered the easiest recipe for making macarons and they’re even better as they’ve got our white chocolate buttercream sandwiching them together but you could also use our chocolate ganache recipe🥰
We used a mint green food colouring gel for the macaroon biscuits and then a pink food colouring for the buttercream, but the colours are your choice!❤️🧡💛💚💙💜
We used our Mortimer Chocolate White Couverture Powder for the buttercream. ☺️
Here’s how to make the macarons with buttercream:
Ingredients: (macaron)
•60g ground almonds
•120g icing sugar
•70g egg whites
•40g caster sugar
•Food colouring
Ingredients: (buttercream)
•50g butter
•100g icing sugar
•25g Mortimer Chocolate White Couverture Powder
•Food colouring
Method:
1) In a blender, blend together the ground almonds with the icing sugar before passing through a sift into a bowl, get rid of any bits which do not go through the sift.
2) Whisk the egg whites until they become foamy, slowly, a teaspoon at a time, add the caster sugar whilst whisking.
3) Add a couple drops of food colouring gel into the egg white mixture and whisk until it forms still peaks.
4) In half’s, add the almond mixture into the egg white and fold in with a spatula, keep folding until the mixture runs like lava.
5) Put the mixture into a piping bag with a round tip and pipe symmetrical circles onto baking paper on a baking sheet.
6) Gently bang the tray on a smooth surface before leaving the macarons to one side for 30 minutes.
7) Once the macarons have a dull skin to them, put them in the oven for 15 minutes at 150°C.
8) Whilst the macarons are cooking, make the buttercream by blending all the ingredients together with an electric whisk until smooth.
9) Once the macarons are out of the oven, pop them off the baking paper and let cool before sandwiching them together with the buttercream and enjoying.
