What a Friday. Thanks and for the invite to Cork. This degree looks incredible. Great focus on sunjects, blended learning, study whilst you work. I got to speak to some the lecturers and key members in butchery, this really is going to be a game changer! Bring on Spring 26!

Mid week roast. This fed 4 and we had leftovers. I love big free range chickens. Thanks
Simple marinade. Oil oil, lemon juice, oregano and salt.
Spatchcocked this chicken took about 50 minutes to cook.

22 day aged ribs of beef from Enniscorthy. First of many I hope. Great as steaks but with the winter setting in,perfect as a standing or carvey rib roast.
1 bone per two people is usually a good rule of thumb. With enoughleft overs for the best beef sandwichs.
