Last night we made Mediterranean Chicken Kebabs with our new Bioglow Lumpwood charcoal.
Ingredients:
2 medium courgettes
1 aubergine
300g boneless chicken, cut into 2-3 cm cubes (around 1 in)
A few pickling onions
1 red or yellow pepper, cut into 5cm/2in squares
For the marinade:
90ml/6 tbsp olive oil
45ml / 4tbsp fresh lemon juice
1 garlic clove, finely chopped
30 ml/2 tbsp chopped fresh basil
salt and freshly ground black pepper.
Serves 4

Instructions:
To make the marinade, mix the olive oil with the lemon juice, garlic and basil. Season with salt and pepper.
Slice the courgettes and aubergine lengthways into strips 5mm / 0.25in thick.
Cut them crossways about 2/3 down their length. Discard shorter lengths. Wrap half the chicken pieces with the courgette slices and the other half with the aubergine slices.
3. Prepare the skewers by alternating the turkey, onions and pepper pieces. Lay the prepared skewers on a platter and sprinkle with the flavoured oil. Marinate for 30 minutes.
4. Place an adequate amount of charcoal into your barbecue, making sure to spread the pieces evenly to ensure good heat coverage. Light and wait until the flames have died down.
Cook for about 10-15 minutes, or until the chicken is cooked and pieces are tender, turning the skewers occasionally.
