The perfect Winter warmer, Shakshuka is a spicy staple for a rainy day at home.

From your local greengrocer, :
1 large onion
2 cloves garlic
2 roasted red peppers
A handful of flat-leaf parsley
4 Cacklebean free-range eggs

From your local Italian deli,
1 jar of Parente peeled tomatoes
A large spoonful of chopped spicy anchovy fillets (to taste)
Double concentrate tomato puree
Extra virgin olive oil

From your home pantry:
1 tsp smoked paprika
1 tsp ground cumin
½ tsp mild chilli powder
A pinch sugar

🎃 🌶 Carved Pumpkin Waste Thai Soup! 🌶 🎃
That's a mouthful, and so is this flavoursome soup! Don’t waste your Halloween pumpkin, try this deliciously cosy seasonal recipe.

You will need:
1 tbsp vegetable oil
1 brown onion, chopped
1.2kg pumpkin, peeled, chopped
300g cream delight potatoes, peeled, chopped
2 garlic cloves, crushed
1/4 cup Thai red curry paste
2 1/2 cups chicken-style liquid stock
400ml can of coconut milk
2 tbsp unsalted roasted peanuts, finely chopped
2 tbsp fresh coriander leaves, chopped
1 green onion, finely chopped
2 tsp lime juice

Enjoy the spice kick and tag us in your pumpkin-waste creations!
