Baked Oats - Almond and Raspberry
You know I love to test out a trend around here… but this is a trend that is here to stay in our house. I love eating cakes, and baked oats make me feel like I have eaten a delicious cake for my breakfast, plus they keep me feeling full for ages.
I love how versatile you can be with the flavours depending on what’s in your fridge. The recipe is also really forgiving if you need to change it up.
🍽Recipe - serves 2
100g Oats
2 tbsp Flaxseed
1 tsp Baking Powder
2 tbsp Ground Almonds
Pinch of salt
1 ripe banana
4 dates
1 egg
50 ml Milk of choice
1 tbsp Maple Syrup
1/2 Cup of Raspberries
Spray Oil
To serve - yoghurt, flaked almonds, raspberries, maple syrup.
🍽Method
1.In a food processor whiz up the oats, flaxseed, baking powder,almonds and salt until combined.
2.Add in the banana, dates, egg, milk and syrup and whiz briefly until combined.
3.Spray a baking tray - I used two around 10cmx20cm, pour in mixture, top with raspberries.
4.Bake at 160fanC for 20-25 mins, will look like cake once cooked and feel spongy to the touch.
5.Allow to cool for a few mins before enjoying with toppings of your choice.

Chicken Jalfrezi
A chicken curry is a staple in our house, this one is super quick to make but big in flavour, thanks to the addition of extra masalas( spice mixes) and the final addition of a big spoon of thick yoghurt gives it a restaurant like finish. Perfect to enjoy with rice, naan or roti and a salad.
So now that the heat has final hit and summer is here, it’s time to spend as less time as possible in front of the stove and more time sun-bathing.

🍗 Ingredients
1 tsp Butter
1 tsp Oil
2 tsp Cumin Seeds
7 Garlic cloves minced
2 Red Onions Sliced
2 inch Ginger grated
2 Green Chillies chopped.
600g Chicken Breast Cubed
1 tsp Coriander powder
1 tsp Red Chilli powder
1 tsp Paprika
Salt
1/2 tsp turmeric
1 tsp Butter Chicken Masala
1 tsp Meat Masala
1 Red Pepper sliced
1 tbsp Tomato purée
Splash of Water
1 tbsp Thick Greek Yoghurt.
Fresh coriander to garnish
🍗Method
1.Heat butter and oil and add in cumin seeds, add in garlic and cook until golden.
2.Add onions, ginger and chillies and cook for 3/4 minutes.
3.Add in Chicken, followed by all spices, cook out for 1 minute before adding in tomato purée.
4.Add a splash of water, lid on abs cook for 15/20 minutes until chicken is cooked through.
5.Add in yoghurt and garnish to serve.

Everyday Indian - Super Speedy Dhal
The second part of my series had to be a quick dhal, perfect to make on those midday evenings when you need to do a food shop and only have 30 minutes to get dinner on the table. This recipe is inspired by my Sil who sent over a portion of this dhal one evening and we just loved it.
This is a light simple dhal that I often make on a Monday after busy and food filled weekends.
What’s your go to meatless Monday meal?
✅Time saving tip -soaking your lentils before hand so they cook faster.
✅Cooking your onions quickly and for a short time so they remain crunchy for added texture
🧅 Ingredients
1 Cup of Red Split Lentils
1 tsp Rapeseed oil
K**b of Butter
1 tsp Cumin
1 Onion finely sliced
3 Garlic cloves finely sliced
2 inch Ginger julienned
Green Chilli to taste
1 medium Tomato cubed
1.5tsp Turmeric
Salt to taste
Coriander finely chopped
🧅Method
1.Place lentils in a large pan and cover with 6 cups of water, bring to the boil and then simmer for 15 minutes.
2.In a frying pan heat oil, butter and add cumin seeds.
3.Add garlic and onion, cook for a few minutes until translucent.
4.Add ginger, chillies, turmeric and salt and cook for further 2 minutes.
5.Add in tomato and cook down for final 2 minutes, add to cooked dhal, stir and garnish with coriander.

Mini Granola Muffin Bites
These little bites of deliciousness are much simpler than regular muffins and being so tiny means they cook in a flash too. All you need is a mixing bowl, a spoon and a mini muffin tray.
I love baking and waking up in the morning to a house that smells of this deliciousness is just the best, but let’s be honest even weekend mornings come with a little bit of chaos when you have kids. No one has time to let butter soften, eggs to come to room temperature or get a mixer out.
That’s why I love these super simple granola muffins, I also love the fact they are refined sugar free, dairy free and vegan. But more important than that they are delicious especially when fresh out of the oven.
Cake is always a good, but cake for breakfast is something great. Do you agree?⁣
🫐 Ingredients - makes 24 Mini Muffins
30g Flour
10g Almond Flour
10g Oat Flour
2 tsp Flaxseed
1/2 tsp Baking Powder
Tiny Pinch of Salt
40g Fresh Blueberries
10g Dried Blueberries
35g Pecan Pie Granola
20ml Rapeseed Oil
20ml Maple Syrup
40g Coconut Yoghurt
1/2 tsp vanilla
15g Almond Butter
🫐Method
1.Line a mini muffin tray with cases and preheat the oven to 160C fan.
2.Gently mix together flours, flaxseed,baking powder, blueberries and granola until combined.
3.Create a well in the centre and pour in remaining ingredients, whisk until combined, if mixture is too thick add a splash of almond milk.
4.Pour into mini cases and bake for 20-22minutes. ⁣

Chilli and Bacon Baked Pancake Tray
One of my fav combinations is sweet and chilli, last week I had Chilli Heatwave Doritos dipped into Chocolate Mouse … soo good. But if you want a safer option to try then this delicious, super easy to whip up pancake tray bake is great for breakfast. You could serve it on its own, with some chilli sauce, extra maple syrup or even some eggs on the side.
Much easier than flipping over pancakes, the entire tray of pancakes gets cooked in the oven, while you sit back and enjoy that first morning cup of coffee.
I used turkey bacon in this but feel free to use regular, veggie or replace it with some feta cubes for the same salty hit.
What’s your favourite sweet and chilli combo?
🌶Ingredients
160g Flour
1 tsp Baking Powder
1/2 tsp Bicarbonate of Soda
1 tbsp Maple Syrup
1 tsp Red Chilli Flakes
Salt & Pepper
30g Cheddar grated
1 egg
200ml Whole Milk
2 tbsp Oil
1 Red Chilli sliced
4 Turkey Bacon Rashes chopped - or a meat/veggie alternative
🌶Method
1.Preheat oven to 180C fan, 370F and spray a 9x13 inch tin lightly with oil
2.Whisk together flour,baking powder, soda, salt & pepper and chilli flakes.
3.Male a well add in cheese, egg, maple syrup, milk and oil and whisk until just combined.
4.Pour into tray and top with sliced chilli and bacon.
5.Bake for 20-25 minutes and serve.⁣

⁣Tutti Frutti Chia Pudding Pots
Who remembers Tutti Frutti Ice cream?? I’ve tried to recreate a much healthier version of that for breakfast, using a simple chia pudding, a sweet rose strawberry syrup, dried tropical fruits and the crunch of granola.
Although it sounds like a lot of ingredients most are just yummy toppings which you just need to sprinkle on and the majority of the work for this is done overnight by your fridge.
Did you know chia seeds are high in fiber, protein and fatty acids, meaning you tick off lots of boxes to have a balanced breakfast.
I always feel like your day starts off great when you begin it with a desert. Have you tried chia pudding before? ⁣
🍓Ingredients for 2
2 Tbsp Chia Seeds
1 Cup of Milk (your choice)
6 Strawberries puréed
1/2 tsp Rose Essence
2 tbsp Yoghurt
Toppings - Granola, Fresh Strawberries, Chopped Dried Fruit - Mango, Papaya, Pineapple, Pistachios, Almonds, Pumpkin Seeds, Dried Strawberries, Rose Petals
⁣🍓Method
1.Combine chia seeds and milk and leave overnight in the fridge.
2.Mix strawberry purée with rose Essence and yoghurt and top pudding.
3.Sprinkle over your toppings and enjoy.⁣
