Scottish Lobsters are famous worldwide for their incredible taste and are dark blue in colour turning bright orange-red when cooked. 🦞

They have long bodies with strong tails with one claw designed for crushing, and another for cutting. Lobsters claws are banded on the boats when removed from the creels ahead of transportation.

Our hub in Larkhall is our official live holding and processing centre here in Scotland. πŸ“

Our Larkhall facility maximises traceability and provenance of our shellfish with a capacity of 210,000 litre seawater storage.

Temperature control is provided by high capacity chilling systems through which water is pumped, and the same pumping operation passes seawater through filtration systems to maintain the highest quality. 🌊

Our systems use a combination of high-pressure water pumps and algae scrubbers as filters, instead of mechanical filters and chemicals.
