"When I started my cooking apprenticeship, I had this romantic picture in mind: chefs go to the market, talk to producers, get inspired by fresh produce, and build their kitchens around them.
The reality was very different for more than 20 years. I can probably count on one hand the number of times I deliberately shopped at the weekly market. Not because I didn't want to, but because it simply wasn't practical. Time played a part, but logistics were the biggest challenge. The Leipzig weekly market is difficult to access by car, and once you're buying in larger quantities, you quickly reach your limits. So, like many others, I ended up relying on the wholesale market.
That's exactly what has changed.
Thanks to my Load 75, I can regularly visit the market again. Not just to shop, but to connect. To see what's in season, discover what's coming next, and talk to the people who grow and sell the produce.
A little tip: weekly markets are also a fantastic place to pick up young plants for the garden, I do that now too.
