~ Chocolate Rockpool ~
Last weekend overlooking Porthcothan Bay.
Tim asked me to create an edible table centrepiece with desserts for his husband’s 60th birthday dinner as well as give an afternoon macaron making demo beforehand for their lovely family and friends. Super fun ☀️🌊😊
The sculpture…
Large rock - ganache layered rich chocolate birthday ‘cake’ coated with sculpted chocolate and with ‘driftwood’ initial,
Carved chocolate rockpool with strawberry & champagne jelly ‘water’ containing chocolate fish & seashells,
Rice paper seaweed,
Chocolate pebbles,
Chocolate sand,
Chocolate limpets, scallops, starfish, conch, urchins, cowries, mussels and more.
The desserts (chilling in the fridge to join the display later in the evening)…
Mini lemon possets with scallop shell lemon zest & seaweed shortbread biscuits,
Mini strawberry and white chocolate pavlovas,
Sea salt caramel macarons,
Hazelnut & pistachio gianduja truffle pebbles,
Raspberry coulis and Passionfruit coulis.

Palm leaf personalised dessert plates handpainted with edible cocoa butter beach & sea.
