When life gives you lemons… make two lemon drizzle cakes 🍋✨
Double batch today = double the happiness 💛 The kitchen smelled amazing while these baked! Soft, fluffy sponge with that perfect zesty kick, finished with a tangy drizzle and smooth icing on top 🍰
**If you are baking only one cake just use half of Ingredients
Here’s the recipe I used (for 2 cakes):
✨ Cake:
500g self-raising flour
500g butter (or baking spread), softened
500g sugar
8 eggs
Zest of 4 lemons
✨ Lemon drizzle:
Juice of 4 lemons
200g sugar
✨ Icing & Liquor
500 g of icing sugar / 500 g of butter
Zest of 3 lemons + lemon juice of the 3 lemons
