RARE COFFEE

Experimental Processing, Limited Runs.

Our first Rare release showcases an incredible carbonic maceration natural coffee from an often overlooked origin.

Established in 1920, Ratnagiri is owned and operated by Ashok Patre. Ashok described the process for this lot as follows:
“This is a 96-hour extended carbonic maceration natural processed coffee. It is from the Hemavathi varietal grown on our farm at 4500 feet from the block called Sivermara Patte.

The Brix of the coffee cherries was 25.9 when harvested and they were put in the Bio fermenters after floater removal. The coffee was inoculated with a mix of different lab-grown cultures. The tanks were then purged with carbon dioxide gas, and the coffee was fermented for 96 hours. After removing the coffee, they were directly put on raised beds for slow drying. The coffee was then dried slowly with constant stirring over the next 31 days”

This coffee highlights how careful processing can impact flavour. We love the mango, orange and marzipan notes this coffee offers.

RARE COFFEE - INDIA RATNAGIRI

The first of our rare coffees, this carbonic maceration natural has notes of mango, orange and marzipan.

Established in 1920, Ratnagiri is owned and operated by Ashok Patre. This is a 96-hour extended carbonic maceration natural processed coffee from the Hemavathi varietal grown at 4500 feet on our farm in the Sivermara Patte block.

The Brix of the coffee cherries was 25.9 at harvest, and after floater removal, they were placed in Bio fermenters. The coffee was inoculated with a mix of different lab-grown cultures, then fermented for 96 hours under carbon dioxide. Afterward, it was moved to raised beds for slow drying, which took 31 days with constant stirring.

Despite the extended processing, this coffee is surprisingly juicy and clean.
