This week has been all about progress!

The walls have been plastered, the air conditioning is installed, the extraction is finished, and we’ve had a proper clear-up ready for the floors to go down 👏

I’ve also spent a couple of days interviewing people to join the Bread Bin team, which has made everything feel even more real.

It’s still looking a bit more like a building site than a bakery, but I can finally picture how it’s all going to come together.

This week has been less about building work (Although that’s all going on behind the scenes!) and more about reconnecting with some very familiar faces.

On Wednesday we were at HQ brushing up on our coffee skills with Josh at and on Friday I had two of my old bakers at the Garage Bakery testing some new bread recipes for our opening.

Alongside that, it was the usual Friday and Saturday pastry bake for , plus a couple of deliveries that were a real pleasure.
It’s weeks like this that remind me how lucky I am to have such lovely people around Bread Bin 🫶

After what’s felt like weeks of staring at an empty shell, things are finally happening!

This week we’ve had electricians, plumbers and joiners through the doors, first fix electrics and plumbing are done and although it currently looks more like chaos than a bakery, it’s starting to feel real. We’re one (baby!!) step closer to opening the doors on Victoria Road!

Can’t wait to show you more. 🥐

We're back! This is your Sunday menu for our .4 pop-up at 🥐

After a couple of Sundays away, it only felt right to let you help choose this week's menu and you certainly didn't disappoint.
Some firm favourites and a few regular requests!

We'll be there from 9:30am–1pm.

As always, we'd recommend getting down early if you've got your eye on something in particular.

It’s probably time I re-introduced myself 👋

I’m Lisa, the person behind Bread Bin Bakery. I left a 30-year career in law, opened my dream bakery in Altrincham, got shut down after ten months and somehow, 20 months later, we’re getting ready to do it all again.

The last 20 months have been strange, hard, quiet, busy, frustrating and unexpectedly lovely.

Customers kept messaging. Friends kept checking in. Bakers, suppliers and local businesses kept encouraging me. Pop-ups turned into proof that Bread Bin hadn’t really gone anywhere.
So this is the story of how I got here, what happened next, and why we’re getting ready to do it all again.

Bread Bin Bakery will be opening in Hale later this year.

The UK heatwave: 10/10 for everyone.
0/10 for laminated pastry. 🥐☀️

This week has been all about working around the temperature.
Very early starts. Middle-of-the-night pastry prep. Working as quickly as possible before the pastry decides it’s had enough!

There were a few moments that definitely didn’t make the vlog (it’s hard to grab the camera when pastry is sticking to the rollers of the pastry sheeter 😅), but we thought we’d show you a little glimpse of what baking through a heatwave actually looks like.

Thankfully, next summer should be a different story. Our new bakery will have air conditioning... and I genuinely can’t wait.

Another week, another vlog 🥐
I started with a trip down to London for a Heritage Grains course at . Thank you maisiecollinschef - I really learnt a lot.

Then on Tuesday it was time to try a few bakeries. First stop was on Margaret Street, which was an easy 10/10. Then on to Fabrique for a cardamom bun that, if I’m honest, didn’t quite live up to the hype.

The day finished with a trip to Milton Keynes to visit and take a look at some new provers and freezers for the new bakery.
