Foo Ferments, Jazzed on Grains and Sæsonmelier have joined forces for a very special dinner (link in bio):

Think comforting food inspired by traditional family recipes made with local, seasonal ingredients and paired with delicious natural wines. The menu features four intentional dishes and a dessert.

The people behind the dinner

Foo Ferments is a q***r and female-owned fermentation company using new and traditional techniques to produce tasty, nutritious and sustainable East Asian ferments. We believe that food should be kind, inclusive and accessible.

Jazzed on Grains’ mission is to make the most scrumptious and diverse pasta. We work with organic Danish farmers who grow an exciting array of old school grains. Grains with deep root systems that contribute to soil health and that absorb lots of nutrition from the soil. The grains are stone milled by small Danish mills, preserving all nutrition and benefits. The flour is sent to us straight off the mill and we produce small batches daily, made of only flour and water.

Sæsonmelier imports and distributes natural wines from the overlooked regions of Europe. We work exclusively with small, passionate winemakers from Central and Eastern Europe, who craft their wines with heart, (own) hands, and soul.

For a few Fridays evenings in September, I’ve been quietly transforming Foo Ferments into an extension of our home dining room. It has been fun, creative and heart warming.

Bookings are now open and slightly easier (link in bio). Expect family style dinners with rotating dishes. Think stews, stir fries and anything a Chinese/Iranian family would have on a Friday night.

Gather in larger groups with your friends and family for that traditional fuzzy warm feeling

🌱Soy Sauce Party Update🌱

This is me with my aunt and uncle planning the menu. As you can see, we’re pretty excited about it. And if you know any of us, you know we’re kind of a tough crowd.
I think we did well. The menu is simple yet diverse. And will do a good job of showcasing the much anticipated soy sauce as well as (my secret favorite) hoisin sauce.
We’re expecting quite a few people to stop by so if you know you’d definitely like some food, DM me so we know to plan quantities accordingly.

Silky tofu - fried shallots (or pork floss), chinese herbs, soy sauce sauce, steamed rice

Silky tofu - century egg, chinese herbs, soy sauce sauce, steamed rice

Scallion pancake 葱油饼 - my grandmother’s recipe! served with hoisin sauce

Bahn Mi - tofu, pickles, herbs and hoisin sauce

Cold noodles - wheat noodles, chinese herbs, soy sauce sauce

The short version:
Updated opening hours! August is web shop only. And hope to see you for the much anticipated soy sauce party August 31, kl12-15. The menu will consist of small plates featuring soy sauce and its cousin, hoisin sauce. Curious why they’re related? Come by then to learn more :)

The long version:
We’re not as emo as we used to be, or maybe we just hide it a little better.
Living very far away from family is not the easiest. Yes, you can say that you get the breathing room one needs for personal growth. But it does come with a lot of heartache.
Since birth, we moved around as a family a lot. So we’re very used to saying hi and goodbye. I’m finding this process more difficult with age. And learning more about the importance of connecting with and making time for family.

As a small business owner, this was not the easiest choice to make. But ultimately, when family from three continents decide to convene in Denmark, I understand the rarity and choose to prioritize family and love.
In the last picture, you’ll find more than half of the family coming to visit; my brother and his family (minus the sleeping youngest), my uncle, and my aunt. Seven members in all. It will be a special time, once in a lifetime.

Thank you all for your understanding and continued support. And see you when Foo Ferments launches its first ever soy sauce at the end of August. And in September, look forward to Friday evenings for family style dinners.

I know it doesn’t quite feel like summer out there but the calendar says otherwise. Going to take the chance when the city goes into slow down mode to also do the same.
This means that the shop is open BY APPOINTMENT ONLY in July. Giving me time to focus on all the bits and bobs that need paying attention to.
Come by this last week in June to say hi and see everyone again with regular opening hours in August!

Some fermented goodies and delicious food by Foo Ferments, many refreshing drinks by Dzidra.

The menu is vegetarian! And looks like this:
Starters - some fermented, some soupy, some not
Main - a riff of the rice bowl concept

Come celebrate the summer solstice (夏至) with a five element themed dinner.

Lan-xin prepares food and Pardis .healing.space gives a talk about the therapeutic elements of food and which foods to consume, especially in the summer season.

This dinner is a collaboration between an experienced TCM healer with a passion for food as medicine and a food nerd currently knee deep in fermentation.

The five elements or more accurately known as the five phases theory is a complex system based on millennia of data collection and studying by Chinese scholars. It helps to explain a wide variety of different phenomena ranging from herbal medicine to cosmic cycles.

The summer solstice marks the time of the year when the yang energy is at its peak. Therefore the food at the dinner will feature ingredients that tonify the body for the summer season in order to help balance the yin & yang as well as your mental, emotional and physical body.
