Oialla Oialla chocolate is an organic Danish award-winning chocolate, made from wild cocoa beans. The cocoa trees grow in Mid and South America in the Amazon region.

Oialla is the purest imaginable kind of chocolate and we control the entire process from beans to bars. Our chocolates are recognized by professional chefs at some of the best restaurants in the world. Danish Ministry of Foreign Affairs support the project and Oialla work closely together with the Bolivian cocoa company, Sumar. The production is controlled all the way from cocoa beans to chocolate

bars. The partnership secures fair wages, higher living standards and education of the indigenous population in rural Middle America and the Amazon region. The production of Oialla contributes to improvement of education of the indigenous population in the jungle, where the cocoa beans used for Oialla grow.

The workers spread out the freshly fermented beans on a black nylon tarp suspended on wooden pillars. Traditionally the beans dry on cow hide in direct sunlight, but the suspension ensures that water evaporates from both sides. Another tarp hangs above to protect them from direct sunlight and overheating. The workers turn the beans and monitor the temperature. If the beans get too hot, they begin to roast and develop off-flavours. If they dry too fast or roast, the beans become too acidic.

Did you know that cocoa beans grow in pods on trees of the Theobroma cacao tree? This is how the flowers look before they grow into pods🌸
The tree originates from the Amazonas but has been planted in other places around the world. It grows most successfully in a narrow band called the Cocoa Belt or the Chocolate Belt, where the temperatures are fairly constant hot and there's a high humidity all year around.

Did you know that Oialla's cacao nibs are sorted by hand by the local women working in our cacao production in Bolivia?🙌🏽 It might be more time consuming but in Oialla we don't compromise on quality! And the simple fact is that it tastes better when the nibs are sorted by hand and not on a machine, because the poor beans are discarded🤍
