We’ll be at Sunday, May 3 (11–4) for the May Day Spring Fair, one of our favourite spring markets.

We make our chocolate bean-to-bar right here in Victoria, working directly with farmers we know and trust. It’s all about the bean for us. No additives, no shortcuts... just great cocoa, carefully sourced and crafted to bring out the true flavour of each origin.

We’ll have our full lineup of bars and confections with us. Come by for a taste, a chat, and a walk through the orchard.

At Wallace Craft Chocolate, we let the cocoa shine.
While most chocolate makers, even many “bean-to-bar”, add cocoa butter, soy lecithin, or other fats to alter the texture or mute acidity, we don’t.

Our bars are made only from what’s essential: single-origin cocoa beans, organic cane sugar, and (in milk bars) locally sourced whole milk. That’s it. No fillers, no shortcuts, no masking the natural complexity of the bean.

Every bar tells the unique and wonderful story of its origin: the soil, the climate, the cocoa beans, the farmers, the craft. Pure chocolate, the way it was meant to taste.

This is where great chocolate begins — deep in the rainforest, in fermentation step boxes like these in Liberia.

After harvest, farmers scoop out the fresh cocoa beans — still coated in sticky white fruit pulp — and place them into these wooden boxes. The boxes are stacked in a “step” formation to allow gravity to help drain the juice and air to flow. Beans are turned from one box to the next over several days (usually 5 to 7), helping ensure an even, consistent fermentation.

Why is this important? Fermentation is where the beans start developing the complex flavours you taste in fine chocolate. The natural sugars in the pulp break down, heat builds, and microbes transform the beans — reducing bitterness and bringing out deep, fruity, floral, and nutty notes.

We work closely with our farmer partners to fine-tune this process: From the timing of the harvest, to the number of days in each box, to how the beans are turned and covered. It’s hands-on, careful work, and it’s essential to unlocking the potential of the cocoa.

Strawberries, rose petals, and delicious chocolate—who says flowers are only for that special day in February?

We’ve been busy in the workshop, handcrafting our Strawberry Rose Petal chocolate bars. Each one starts with our silky Dominican Republic White or 75% Philippine Dark chocolate, poured into molds and liberally showered with fragrant rose petals and luscious strawberry pieces. The result? Chocolate bars that are as stunning as they are delicious.

The roses are blooming, the berries are ripe, and we’re leaning into the season.
