Examine the Grill-
After uncovering grill covers, check all the hoses, connections, and other technical components to be sure they are all undamaged. If you have a propane unit, see if the tank is full, and change out any batteries for fresh ones.

Measure Your Fuel Level-
Running out of fuel in the middle of barbecuing is an epic party fail if you have a propane unit. Who wants a half-cooked steak? So, think ahead by checking your fuel level before firing up your grill.

Clean Your Grill-
Even if you stored your grill safely and used grill covers throughout the idle months, it’s still wise to give it a good scrubbing before using it. There’s a good chance a layer of leftover residue might be present from the last grilling season.

Stock Up Grill Essentials-
From burgers and chips to fresh grilled veggies, BBQ time is pleasing when you’ve got good grill tools by your side. Here are some essentials to gather.

Weatherproof Your Grill From Spring Showers-
Frequent rain showers are a staple of springtime weather in most parts of the country. To avoid ruining your barbecue day because of the surprise drizzle, it’s important to weatherproof your grilling .

Season Your Grill
Seasoning is the process of heating and oiling the grates to keep your grill operating at its prime. As most grill crates are made of cast iron, they are more likely to get corroded. Therefore, seasoning them with a light coating of oil or cooking spray helps protect them from rust.

Yield: plan on 1 rack yielding 1-3 servings
Prep time: 30 minutes
Cooking time: 4 hours
Ingredients
1-2 racks of baby back or St. Louis cut ribs
TLP Kanas City Sweet
TLP Kanas City Sweet BBQ sauce

This recipe is a play off of the 2-1-1 ribs method. This means cook at 225°F with smoke for the first 2 hours. Then cook 1 hour wrapped in foil with our ingredients above. Then 1 more hour unwrapped to firm the meat back up a little. If this is your first go at it try just adding wood for smoke during the first 2 hours. It won’t be needed during the foiling. You may have to adjust to suit your smoker, but start with 2-1-1 as a template and go from there.

1) One to two hours before cooking rub the ribs with TLP Kanas City Sweet. If you do the back side and then let sit for a minute or two it will stick on better. Then flip the rack and get the other side. Wrap them up with saran wrap and then place them back in the fridge to "marinate" in the rub until ready.

2) Fire up your smoker/grill to 225°F. use a mix of oak/hickory or pecan.

3) Place your ribs in the indirect zone (away from flames) on your smoker/grill. Cook the ribs for 2 hours uncovered. Putting the rub on early allows some moisture to be pulled to the surface. This does several things. Namely it helps form the "bark" and it will keep the ribs from drying out during this first phase.
4) For the next hour we will wrap the ribs up in foil, Take the ribs off the smoker and lay them bone-side down on a layer of foil. Spray with apple cider vinegar. Then pour on your sauce from one side to the other.
5) Double-wrap the ribs with the foil and place them back on the smoker for 1 hour (no smoke).
6) After the hour un-wrap the ribs. Remove them from the foil
7) Continue to cook uncovered for the next 45 minutes. Done temp of 190-200 degrees F
9) When done, allow the ribs to rest loosely covered for 10-15 minutes and then
ENJOY!!
