This spring, we’re introducing a new collection of chocolate bars, along with a reimagining of some of your favourites.

To celebrate, we’ll be sampling one bar each week in shop. It’s a chance to taste what’s new, discover a favourite, and experience the collection firsthand.

Come in this week to try our Bergamot Bar 🍫

4 of 30: I had been in Canada for two years when I decided to make the leap and open a shop in Toronto. My Dad supported my decision and we partnered together to open Stubbe Chocolates Toronto in October 1995.

This was my first shop and I felt like a deer in the headlights. It was so excited to be out on my own, making the big decisions, and adding my own touch to family recipes that had been passed down to me.

This is Moment 4 of 30: My first shop at Avenue & Davenport in Toronto.

3 of 30: The summer of 94 I spend at the Keltic Lodge Hotel on the Cabot trail. Hoping to improve my pastry and my English. Little did I know most of the chef were from France😂 I made as many friends as I made mistakes in the kitchen🫣Sorry Jean Pierre

No. 2 of 30 - My first Christmas in Canada was one I’ll never forget. I was in Ottawa, working with my father, learning the ropes, and getting used to my new home.

That December, the city was hit with one of the biggest snowfalls in years. My father’s shop was in the Byward Market, and I remember everything had a warm, cheerful, holiday glow to it. I remember looking out at the snow piling high and thinking, “This is home now.” Even though everything was new and unfamiliar, the future was full of possibilities.

This is Moment 2 of 30: My first Canadian Christmas: Snowy, Wet, and Full of Hope.

As we celebrate 30 years of Stubbe Chocolates Toronto, I’ve started thinking about all the moments that have come together to bring the shop to where we are today.

Over the following months, I’ll be sharing 30 moments that helped shape this incredible journey. Some are big milestones, others are small memories, all are meaningful.

The first moment takes me all the way back to Germany in 1995.

Before I ever set foot in Canada, a local German newspaper wrote a story about a young chocolatier (me!) who was getting ready to move overseas to open a chocolate shop.

Leaving my home country to start something new on a different continent was a big leap. But it was the first step that led me here, to this city, and to all of you who have supported me for the past 30 years.

This is Moment 1 of 30: The Moment it All Began.
