EMISHIKI Monsoon

Luxurious sweetness and vivid flavor! This sake, inspired by German noble rot wines, has made Emishiki Brewery popular. Normally, when making sake, water is used in three parts. Using “sake” instead of water at the last phase is the sake called 'Kijo-shu'. This leaves a lot of sugar that would otherwise be broken down by yeast and produces sweet and rich sake like a high-end sweet wine. Please enjoy it with desserts as a digestif 🍨

EMISHIKI SENSATION White Special Junmai

Brewed by Emishiki Sake brewery in

This Sensation White uses Ginjo type yeast and has a slightly sweet taste with nice fragrance. Actually, Sensation series are brewed by Junmai Daiginjo class method but using Shiga local table rice in order to offer reasonable price. Nuances of vanilla and banana🍌 Texture is clean, fresh and soft.

EMISHIKI SENSATION Black Special Junmai

Brewed by Emishiki Sake Brewery in

A hint of strawberry 🍓 purely surprised when sipped for the first time. Elegant and delicate. The existence of sake’s flavor itself is very strong – may pair well with dessert as well. Best served in VERY cold. Emishiki sensation has two types, Black label and White label. This Sensation Black, compared with the White, is a slightly dry type with a fresh acidity. Very well-balanced, perfect with meal. It is 50% polished rice equivalent to Junmai Daiginjo, and it takes time to squeeze. Although they are the exact opposite of sake, both are great values for the price, so please compare the two types.

HANATOMOE Yamahai Junmai Daiginjo

Brewed by Miyoshino Jozo

This slightly aged Hanatomoe Daiginjo is a truly unique sake. Not only is it made with Gin no Sato rice polished to 50% making it Junmai Daiginjo, it is also Yamahai (traditional starter ferment). There are not many expressions of Daiginjo that are also Yamahai in the market. Also this sake is fermented utilising naturally occurring yeast in the brewery. This is an expressive sake showing a vibrant fruit driven aroma with a smooth textural palate and fine acid-driven finish 👏

HANATOMOE ‘Yodan’ Yamahai Muroka Nama Genshu

Brewed by Miyoshino Jozo in

This is a complex sake with a variety of aromatics, rich flavors on the palate, and a nice balance of sweetness, dryness, and acidity. There are lactic aromas of yogurt and sweet butter, grain and rice notes of steamed rice and bran, and aromas of almond, orange, and light caramel💛 The body is medium and there are nice flavors of dried fruits on the palate.

The fruity and sweet aroma like ripened apple🍎are very clear. This is a fine representative of ‘Hassen’ bland. The balance of richness and dryness combines well with meals containing herbs or spicy seasoning. Served cold and in a wine glass, it’s superb! 👏
