When we visited the Suncraft workshop in Seki, Japan, seeing their process up close really showed the incredible history behind these blades. They’ve been doing this for generations, blending traditional blacksmithing with serious modern precision.

​If you do a lot of veggie prep, the Nakiri shape is a total game-changer. Here is the quick breakdown:

​The Name: It literally translates to "leaf cutter" in Japanese.

​The Shape: That signature flat profile and square tip mean you’re doing clean, vertical push-cuts instead of rocking the blade.

​The Function: Because the entire edge hits the cutting board at once, you get flawless, paper-thin slices without dealing with those annoying "accordion" veggies that stay stuck together at the bottom.
