Why it works:
* The Problem: Broccoli sprouts have the “raw materials” for sulforaphane, but they also contain a pesky protein (ESP) that often turns those materials into useless byproducts.
* The Fix: Radish sprouts are packed with a “cleaner” version of the enzyme myrosinase but lack that interfering protein.
* The Result: When you eat them together, the radish enzymes help the broccoli precursors convert into active sulforaphane much more efficiently.

TIPS TO MAXIMIZE CANCER-FIGHTING COMPOUNDS

To maximize the green chemoprevention (specifically the cancer-fighting compound sulforaphane) in broccoli and radish sprouts, they should be prepared in a way that activates the enzyme myrosinase—which converts glucoraphanin into sulforaphane—while avoiding high heat that destroys it. To maximize, you must optimize the interaction between the precursor (glucoraphanin) and the enzyme (myrosinase). 
Science indicates that while sprouts can be eaten raw, specific techniques can increase the bioavailability of these compounds by several-fold. 
Here are the science-based methods to prepare them: 

The “Chop & Wait” or “Blend & Wait” Technique (Crucial)

Sulforaphane is only created when the plant cells are damaged (by chewing, cutting, or blending) and the enzyme myrosinase mixes with the precursor. 
1.The Method: Finely chop the sprouts or blend them into a smoothie.
2.The Wait: Let the chopped/blended mixture sit for 40 to 90 minutes at room temperature before eating or cooking.
3.Why: This allows maximum enzymatic conversion to sulforaphane, doubling or tripling the beneficial compounds. 

Gentle Heat: The 70 degrees Celsius Method

While raw is best for retaining enzymes, some people prefer cooked sprouts. Excessive heat kills the necessary enzyme. 
1.The Temperature: Do not exceed 70°C (158°F).
2.The Method: Lightly steam for no more than 3-4 minutes.
3.The Hack: If you cook them, you must add a raw source of myrosinase afterward (like raw mustard seed powder or fresh radish) because heat destroys the enzyme. 

Pair with “Reactivation” Foods Method

To ensure you are maximizing the conversion of precursors to actives, pair broccoli sprouts with other foods containing myrosinase (the “sulfur-grabbing” enzyme). 
Radish Sprouts: Radish sprouts contain a different but similar compound (sulforaphene) and can be combined with broccoli sprouts for a greater overall chemoprotective effect.
Mustard Seed Powder: Add 1/2 teaspoon of mustard seed powder to your smoothie or salad when eating sprouts. This adds massive amounts of active myrosinase.
Raw Radish/Wasabi/Arugula: Mix in with the sprouts.

SPROUTED LENTIL COLESLAW
Ingredients
* 2 cups sprouted lentil
* 4 cups thinly sliced cabbage use a mix of purple and green cabbage
* 1 cup grated carrots
* ½ cup thinly sliced red onions
* ¾ cup fresh cilantro minced
Dressing
* ⅓ cup olive oil
* 3 tablespoons rice wine vinegar
* ¼ cup honey
* 2-4 teaspoons chili paste, if you like spicy.
* 2 teaspoons grated fresh ginger
* 1 teaspoon minced garlic
* 1 teaspoon sesame oil
* 2 tablespoons soy sauce
Instructions
* Combine all salad ingredients in a large bowl.
* Mix dressing ingredients in a bowl or mason jar. Mix well to combine.
* Drizzle over salad and mix in gently to cover all.

BLACK STRAP MOLASSES COOKIES
* 2 1/2 cups all-purpose flour
* 1 1/2 teaspoon baking soda
* 1/4 teaspoon salt
* 1 1/2 teaspoons ground cinnamon
* 2 teaspoons ground ginger
* 3/4 cup butter at room temperature
* 3/4 cup white sugar
* 1/2 cup blackstrap Grow it molasses
* 1 egg at room temperature

INSTRUCTIONS
1. In a medium bowl whisk the dry ingredients. Set the bowl aside.
2. In a large bowl, beat the wet ingredients until creamy and combined. This should take about 2 minutes.
3. Mix well the dry and wet ingredients together and cover the bowl of dough tightly with plastic wrap and chill for 20 minutes.
4. Just before removing the dough from the refrigerator, pre-heat the oven to 350 degrees. Line a large cookie sheet with parchment paper.
5. Use a small cookie scoop to portion the molasses cookie dough, ensuring consistent shapes for your cookies.
6. Coat the dough balls by rolling them in a bowl of white sugar.
7. Arrange the cookie dough balls on the baking sheet with a 3-inch gap between each one.
8. Baking time for the cookies should be 11 to 12 minutes or until the edges start to turn slightly browned and firm. The center of the cookie will have a soft chewy center.
9. Let the cookies cool on a cooling rack.

Sprouts and Micro-greens are tiny powerhouses- ounce for ounce, they contain up to 40 times more vitamins than the mature/fully grown plant.
Micro-greens are also a great source of high concentrations of medicinal plant compounds like Sulforaphane which is known for fighting cancer.
