Over 12 months ago I was contacted by Author Liz Harfull of to feature in a cookbook celebrating rural country shows. The criteria was that I had to have come 1st in a cooking section of a show - Stanthorpe or Tenterfield. Originally, we wanted to submit my red velvet cake but because it's not 100% my recipe, the original creator couldn't be contacted so we went with Plan B - my nostalgic coconut ice recipe! And my coconut ice recipe came with a lovely story of how I ended up in Tenterfield, a career as a lawyer, entering shows 'to fill the cabinets', meeting my farmer and here I am 20 years later.
So here I am featured on pages 84-85 of this lovely cookbook.
It has some amazing recipes that us crazies with rulers like to submit to our local Show and I encourage you to pick up a copy and have a read for yourself. It's such a lovely wholesome book.
As another passionate show baker said "I think it takes a certain kind of temperament to be a show cook. I mean, you can be a good cook but show cooking is about attention to detail".
I couldn't agree more.
