The most important step of making proper Danishes,
is getting the dough right.

The right dough that results in a flaky crunchy Danish is one where butter has been laminated in to the dough.

You get this by first working with a cold dough, then rolling it out, and placing butter in the middle, and folding the dough over. You then roll out the dough again, and this time you fold it over as a letter. This type of fold is called a three layer fold. It givers you your first three layers. Before rolling it out again (and between each fold) you place your dough back in the fridge. Now you repeat this step 2 more times.

This results in a dough with 27 layers (3x3x3).
