Tempering is the simple process of briefly heating whole spices, herbs and aromatics in oil or ghee. This releases their natural oils, deepens flavour and brings a dish to life.
For generations, tempering has been used to finish dals, curries, vegetables and countless family recipes. In Ayurveda, it’s also believed to support digestion by making spices more bioavailable and helping to balance the doshas.
