π€ Recipe of the Month: Prawn and Veggie Stir Fry
Busy week? This one's for you. Fresh prawns, loads of veggies and dinner on the table in under 20 minutes. Yes really. π
What you'll need (serves 4):
π¦ 500g raw king prawns, peeled and deveined
π₯¦ 2 cups fresh broccoli florets
π« 1 red capsicum, sliced
π« 1 cup snap peas
π₯ Half a cup of shredded carrot
π§ 3 garlic cloves, minced
π« 2 tbsp vegetable oil
π₯’ Soy sauce, sesame oil and a pinch of sugar for the sauce
π Steamed rice to serve
πΏ Spring onion to garnish
Here's how:
1οΈβ£ Mix your sauce β whisk together soy sauce, sesame oil and sugar in a small bowl and set aside.
2οΈβ£ Heat oil in a wok or large pan over medium high heat. Add garlic and stir fry for 30 seconds until fragrant.
3οΈβ£ Toss in the prawns, capsicum and carrot. Stir fry for 2 to 3 minutes until the prawns start to turn pink.
4οΈβ£ Pour over your sauce, then add the broccoli and snap peas. Stir fry for another 3 minutes until the veggies are tender but still have a bit of crunch.
5οΈβ£ Serve over steamed rice and garnish with spring onion.
Done. Fresh, delicious and on the table before the kids even ask what's for dinner. π
