Bradley BBQ & Smoke Recipe Guide - Brisket

𝗕𝗿𝗶𝘀𝗸𝗲𝘁 𝘀𝗶𝘇𝗲 (𝘀𝗼 𝗶𝘁 𝗳𝗶𝘁𝘀 𝗶𝗻 𝘁𝗵𝗲 𝘀𝗺𝗼𝗸𝗲𝗿)
• Main rule: it must sit flat on the rack, and you need a bit of space around it for smoke and heat to move.
• If it won’t fit flat, split it into flat and point, or trim/square it up so it sits properly.
• Don’t let it touch the walls or press up against other cuts.

𝗕𝗶𝘀𝗾𝘂𝗲𝘁𝘁𝗲𝘀 (𝘄𝗲’𝘃𝗲 𝗴𝗼𝘁 𝘁𝗵𝗲 𝗳𝘂𝗹𝗹 𝗿𝗮𝗻𝗴𝗲)
• Hickory (our pick for brisket)
• Want it heavier? Mesquite
• Want it smoother? Oak

𝗥𝘂𝗯 (𝗰𝗵𝗼𝗼𝘀𝗲 𝗼𝗻𝗲)
• Lane’s Brisket Rub
• Lane’s SPG
• Lane’s Ancho Espresso

Steps
1. Trim for an even cook. Take off thin flaps and square it up so it sits flat.
2. Rub it, then fridge it for a few hours so it firms up.
3. Preheat the Bradley to around 104°C.
4. Brisket on the rack with space around it, then start smoke early with your bisquettes.
5. Probe the brisket (internal temp is the meat, not the smoker).
6. At around 71°C internal, wrap it and put it back in.
7. Keep cooking until about 95°C internal, then rest at least 1 hour before slicing.
8. Slice, portion, and vacuum seal if you’re packing freezer bags.

Flavour combo: Hickory bisquettes + Lane’s Brisket Rub.

𝗕𝗥𝗔𝗗𝗟𝗘𝗬 𝗕𝗕𝗤 & 𝗦𝗠𝗢𝗞𝗘 𝗧𝗜𝗣: 𝗥𝗲𝘀𝘁𝗶𝗻𝗴 𝗺𝗮𝘁𝘁𝗲𝗿𝘀 (𝗲𝘀𝗽𝗲𝗰𝗶𝗮𝗹𝗹𝘆 𝗯𝗿𝗶𝘀𝗸𝗲𝘁)

Resting isn’t a bonus step — it’s part of getting a clean slice.
If you cut brisket straight off the smoker, you’ll lose moisture fast and the slices won’t hold together.

𝗪𝗵𝗮𝘁 𝘄𝗲 𝗱𝗼:
• Pull brisket when it’s finished
• Keep it wrapped
• Rest at least 30–60 minutes before slicing

𝗪𝗵𝗮𝘁 𝘆𝗼𝘂’𝗹𝗹 𝗻𝗼𝘁𝗶𝗰𝗲 𝗮𝗳𝘁𝗲𝗿 𝗮 𝗽𝗿𝗼𝗽𝗲𝗿 𝗿𝗲𝘀𝘁:
• Cleaner slices
• Better moisture in the cut
• Less mess on the board
